また、No.2〜6に係るサンプルは、前記した香気成分の合計含有量が所定範囲内であったので、含有量に応じて柑橘類の香りが付与されていた。
これらの実施例の中では、No.3〜5に係るサンプルが、コラーゲン臭及び呈味がマスキングされており、総合評価も高く、好ましい態様であることが確認された。
特に、No.3、4に係るサンプルは、コラーゲン臭及び呈味がマスキングされており、総合評価が非常に高く、より好ましい態様であることが確認された。

これに対し、No.10に係るサンプルは、前記した香気成分を含有していたが、コラーゲンの含有量が高過ぎたのでコラーゲン臭及び呈味が十分にマスキングされていなかった(比較例)。そのため、No.10に係るサンプルは、総合評価が低くなった。

これらの実施例の中では、No.12、13に係るサンプルが、コラーゲン臭及び呈味がマスキングされており、総合評価も高く、好ましい態様であることが確認された。
