Various RTD (Ready to Drink) alcoholic beverages have been developed to meet the diverse needs of consumers. Under such circumstances, for example, it is conceivable to include collagen in alcoholic beverages in consideration of beauty and health. However, since collagen has a peculiar odor (called “collagen odor” and the like) and taste, when collagen is contained in various beverages and foods including alcoholic beverages, the above-mentioned collagen odor Often have a unique taste. Several techniques have been proposed that can mask the odor and taste of collagen caused by including collagen in alcoholic beverages and the like.
For example,
Further, for example, Patent Document 2 describes a jelly drink characterized by containing a fish-derived collagen peptide and an indigestible dextrin.
The technique described in
Moreover, although the technique of patent document 2 has masked fish odor (collagen odor) and flavor (taste) with the indigestible dextrin, when it contains indigestible dextrin, there exists a tendency for a flavor to blur, In some cases, the collagen odor and taste could not be masked sufficiently even if contained in a content that does not affect the flavor of the alcoholic beverage.
This invention is made | formed in view of the said situation, and makes it a subject to provide the alcohol beverage by which collagen odor and taste were masked, its manufacturing method, and the flavor improvement method of alcoholic beverage.

And gelatin obtained by extracting and purifying collagen by heating, and collagen peptides obtained by enzymatic degradation of gelatin, and one or more of these can be used in combination. As described above, since the collagen peptide is obtained by enzymatic degradation of gelatin, it has a low molecular weight and is not only soluble in water but also has no gelling ability and is therefore easy to use in beverages. . In addition, since the collagen peptide has a high absorption rate into the body, it can be expected to improve the beauty and health. Therefore, it is preferable to use a collagen peptide among the alcoholic beverages according to this embodiment. In addition, as for the molecular weight of a collagen peptide, it is preferable that an average molecular weight is about 300-10000, for example, and it is more preferable that it is about 3000-7000.
(Collagen content)
Although the alcoholic beverage according to the present embodiment contains collagen, the content is not particularly limited. The collagen content can be, for example, 770.0 mg / 100 mL or less, 570.0 mg / 100 mL or less, or 420.0 mg / 100 mL or less.
