前記の方法により製造した各サンプルについて、訓練された識別能力のあるパネル8名が下記評価基準に則って「飲みやすさ」、「酢酸とアルコールによるカド」について、−2点〜0点〜2点の5段階評価で独立点数付けし、その平均値を算出した。
なお、全ての評価は、サンプルを飲んで評価した。
また、「飲みやすさ」の評価は、サンプル1−1(−1点)を基準とし、「酢酸とアルコールによるカド」の評価は、サンプル1−1(1点)を基準として評価した。
