The present invention relates to a carbonated alcoholic beverage, a method for producing a carbonated alcoholic beverage, and a method for improving the flavor of the carbonated alcoholic beverage.
Among alcoholic beverages, carbonated alcoholic beverages (also referred to as effervescent alcoholic beverages) that exhibit effervescence are beverages that allow the drinker to feel the refreshing stimulation of carbonic acid.
Research and development of this carbonated alcoholic beverage is being promoted from various viewpoints.

As a result of detailed examination of the flavor of the carbonated alcoholic beverage, the present inventors have confirmed problems that have not been examined in the prior art including
Specifically, in the combination of carbonic acid and alcohol, the present inventors give the drinker a "stimulating acidity" by combining the flavor peculiar to alcohol raised by carbonic acid and the stimulating feeling of carbonic acid. I confirmed that it made me feel.
Therefore, an object of the present invention is to provide a carbonated alcoholic beverage having a reduced pungent acidity, a method for producing a carbonated alcoholic beverage, and a method for improving the flavor of the carbonated alcoholic beverage.

(alcohol)
The carbonated alcoholic beverage according to the present embodiment contains alcohol.
In the combination of alcohol in a beverage and carbonic acid, which will be described later, the present inventors combine the flavor peculiar to carbonic acid and the stimulating feeling of carbonic acid, which causes an unpleasant "stimulating acidity". It was confirmed.
Further, the present inventors not only reduce the "deep feeling of taste" when alcohol is divided by a carbonated beverage, but also the taste becomes thin (the taste becomes fluffy), resulting in an aftertaste. It was also confirmed that the flavor peculiar to alcohol remains with a squeaky feeling (stinging feeling), that is, the "squeaky feeling of the aftertaste" is enhanced.

[contents of the test]
For each sample prepared by the above method, eight trained and discriminating panels performed "squeaky aftertaste", "stimulating acidity", "deep taste", and "beverage" according to the following evaluation criteria. "Comprehensive evaluation as" was individually scored on a five-point scale of -2, -1, 0, +1, +2, and the average value was calculated.
And all evaluations were made by drinking a sample. The evaluation of the "squeaky feeling of the aftertaste" was carried out for samples 1-1, 2-1, 2-2, 3-1 and 3-2.
(Aftertaste squeaky feeling: evaluation criteria)
The evaluation of the aftertaste of squeaky feeling is based on 0 points of sample 1-1, -2 points when "there is no aftertaste squeaky feeling", and "the aftertaste squeaky feeling is about the same as sample 1-1". The case was evaluated as 0 points, and the case of "very squeaky aftertaste" was evaluated as +2 points. Then, it can be judged that the lower the score, the more the aftertaste of the squeaky feeling is reduced, which is preferable.
Here, the "squeaky sensation of the aftertaste" is a squeaky sensation felt in the aftertaste (a state in which the aftertaste feels piercing).

Based on the measurement conditions of the GC-MS method described above, each sample subjected to the above adjustment was measured, and the peak area value of linalol-d3 at m / z 124 and the peak area value of α-cadinol at m / z 121 were obtained. Was calculated, and the ratio of the peak area value of α-Cadinol (= the peak area value of α-Cadinol / the peak area value of Linarol-d3) was obtained.
The retention time of linalool-d3 is 18.26 min, the retention time of α-cadinol is 32.23 min, and the mass spectrum of α-cadinol is as shown in FIG. 1 (horizontal axis: m / z, vertical axis:: Strength).
The table shows the alcohol content of each sample and the ratio of the peak area value of Casinol, and shows the results of each evaluation.
(Examination of results)
From the results in Table 1, it was confirmed that when the ratio of the peak area values of Casinol was equal to or greater than a predetermined value, the stimulating acidity was reduced (lower than the standard score of Sample 1-1). In addition, from the results in Table 1, when the peak area ratio of Casinol exceeds a predetermined value, the profound feeling of taste is enhanced (higher than the standard score of Sample 1-1), and the overall evaluation as a beverage is also excellent. It was confirmed that it would be a thing.
Then, considering all the evaluations, very favorable results were obtained for samples 1-3 to 1-6 (particularly, samples 1-4 to 1-5) among the samples 1-1 to 1-6.
From the results in Table 2, even when a commercially available highball is used, the ratio of the peak area value of the casinol is equal to or higher than the predetermined value as compared with the samples 2-1 and 3-1 containing no casinol. Samples 2-2 and 3-2 containing casinol not only reduce the pungent acidity, but also enhance the profound feeling of the taste and reduce the squeaky feeling of the aftertaste, and are comprehensively evaluated as a beverage. It was confirmed that it also improved.
