表5に示されるように、l−メントールのみを含む場合(比較例10)では、ゼラチン硬度が比較例9に比べて20%以下となり、ゼラチン成形組成物の硬度が低下することが示された。ゼラチン成形組成物が十分な硬度を有していない場合は、製品同士が付着する原因となる。更に、当該十分な硬度を有していない場合は、例えば、カプセル形態にした場合に液漏れの原因となって品質を保持できない。また、ヤマモモ抽出物のみを含む場合(実施例10)は、硬度が高くなりすぎてしまうことが示された。当該硬度の上昇は、製品が硬くなり、食感が悪くなる原因となる。また、例えば、カプセル状やシート状のゼラチン成形組成物の場合においては、硬度が高くなりすぎることは、当該組成物の柔軟性を低下させ、割れの原因にもなる。これらに対し、ヤマモモ抽出物を含有するゼラチン成形組成物に、l−メントールを特定の割合で配合することで、ゼラチン成形組成物(実施例11〜19)の硬度を適切に設定することができ、食感及び品質に優れたゼラチン成形組成物が得られることが示された。 As shown in Table 5, when only 1-menthol was included (Comparative Example 10), the gelatin hardness was 20% or less compared to Comparative Example 9, indicating that the hardness of the gelatin molding composition was lowered. . 上記試験例1のゼラチンシートの調製方法に示す方法に従い、処方例1〜39に記載される材料を用いてフィルム状の菓子(以下、フィルム菓子という)を調製した。下記処方例1〜39の組成物について「ゼラチン臭の低減効果」、「コゲ臭の低減効果」及び「ゼラチンの硬化抑制効果」を評価したところ、いずれも上記実施例と同様に優れた効果が示された。
