- 3−メチル−2−ブテン―1−チオール、3−メチル−2−ブタンチオール及びベンゼンメタンチオールからなる群から選択される少なくとも一種の含硫化合物を10ppt以上の濃度で含有する麦芽飲料であって、
トランス−2−ノネナールを0.06ppb以上の濃度で含有する、麦芽飲料。 - 上記含硫化合物を500ppt以下の濃度で含有する、請求項1に記載の麦芽飲料。
- 麦芽飲料中のトランス−2−ノネナール濃度をX(ppb)、
麦芽飲料中の3−メチル−2−ブテン―1−チオール濃度をY(ppt)とした場合に、式

で表される関係を充足する請求項1又は2に記載の、麦芽飲料。 - 麦芽飲料中のトランス−2−ノネナール濃度をX(ppb)、

該麦芽飲料は、トランス−2−ノネナールを0.06ppb以上の濃度で含有するものである、麦芽飲料の酸化劣化臭、老化臭及び老化味を減感する方法。
