また、ホワイトチョコレートは油分が多く、色が白いために、ホワイトチョコレートを使用したチョコレート菓子は焼成による形状の変化及び色調の変化が比較的大きいものである。しかしながら、本発明の実施の形態に係るチョコレート菓子は、ホワイトチョコレートを使用した場合おいても、焼成前後での形状の変化及び色調の変化が少ないものである。

表1、2に示した配合で、下記製造手順の1〜4に従って、チョコレート菓子用生地を製造した。製造したチョコレート菓子用生地を用いて、下記製造手順の5、6に従って、チョコレート菓子を製造した。焼成前後での形状の変化及び色調の変化を0〜3点の4段階で評価した。形状評価及び色調評価は、点数が高いほど変化は少なく、2点以上を合格とした。また、製造したチョコレート菓子を食した時の風味を0〜3点の4段階で評価した。風味評価は、点数が高いほどチョコレート風味が強く、2点以上を合格とした。それぞれの評価結果を表1、2に示した。
<製造手順>
1.チョコレートを溶かし、30℃程度に調温する。
2.溶かしたチョコレートに、軟らかくしたショートニングとソルビトール(液糖)を
加えて混合する。
3.2で得た混合物に、篩った粉体を加えて混合して、生地をひとまとまりにする。
4.3で得た生地を厚さ1cmに伸ばし、一晩置く。
5.一晩置いた生地を2cm×2cmの大きさにカットする。
6.カットした生地をオーブン(上火140℃、下火140℃)で10分間焼成する。

一方、表2から分かるように、比較例1、2のチョコレート菓子は、全ての評価項目が満足いくものではなかった。また、比較例3のチョコレート菓子は、風味、色調の変化が満足いくものではなかった。
