こうして得られたチョコチップクッキーについて、チョコレート部分のブルームの発生の有無について温度サイクルテストにより評価を行なった。なお、ここで言う温度サイクルテストとは、チョコチップクッキーを17℃で10時間保持した後2時間かけて30.5℃まで昇温し、30.5℃で10時間保持、さらに2時間かけて17℃まで降温する温度変化を1サイクルとし、チョコレート部分の状態変化、を観察し、食感の評価を行った。この結果を表4に示す。

<実施例9>
カカオマス31部、砂糖9.4部、ココアバター7部、レシチン0.4部からなるビターチョコレートにアセチル化蔗糖脂肪酸エステルであるエステルFA−10E0.5部、およびBOB脂1.5部を添加したチョコレート49.8部(油相中SUS型トリグリセリド比率80重量%)を55℃で融解し、上白糖21.5部を加え40℃に温調した。これに23℃の全卵16.5部に炭酸水素アンモニウム0.3部および重曹0.3部を溶解したものを数回に分け添加、混合し、さらに洋酒3.3部および3倍希釈タイプの濃縮乳(『プロベスト500』不二製油株式会社製)8.3部を数回に分け添加、混合し、生地を得た。この生地の配合を表7に示す。この生地3.5gを天板に絞り、160℃、7分間焼成した。この焼成品を食したところ豊かなチョコレート風味を有し、口溶けのよい焼き菓子であった。また、この焼成品を温度サイクルテストにより評価を行なったところ、20サイクル後もブルームを生じず、食感も良好な状態を保っていた。チョコレート菓子配合を表7、結果を表8に示す。
