Description
Claims (8)
- 殻付き卵低温殺菌システムにおいて、
液体の水を含む低温殺菌浴であって、一連の2以上の連続するゾーンを有する低温殺菌浴と、
前記浴のゾーンにおける水の温度を測定する、前記浴の各ゾーン内の1以上の温度センサと、
前記浴の各ゾーン内の水の温度を温度設定ポイント値に上昇させるように機能する加熱システムであって、前記浴の各ゾーン内に1以上の独立制御される加熱要素を含む加熱システムと、
前記浴内で殻付き卵のバッチを保持するバッチキャリア構造であって、当該バッチキャリア構造ひいては殻付き卵の各バッチをゾーン間およびゾーンを通して動かす前進モータを具えるバッチキャリア構造と、
1または複数のゾーンにおける温度が前記温度設定ポイント値よりも高く設定される温度上限に接近したときに、前記低温殺菌浴内の水の温度を選択的に低下させるように機能する冷却システムとを具えることを特徴とするシステム。 - 請求項1に記載の殻付き卵低温殺菌システムにおいて、さらに、バッチ処理制御システムには、バッチ内の殻付き卵の指定のサイズと開始温度に基づいた1以上の低温殺菌プロトコルがプログラムされており、当該プロトコルは、前記浴の温度設定ポイント値を設定し、前記温度設定ポイント値より高い前記浴内の水の温度上限を設定し、各バッチについて前記浴内の合計滞留時間を設定するものであり、
前記バッチ処理制御システムは、前記浴内の各ゾーンの1以上の温度センサから信号を受け取り、各ゾーンの1以上の温度センサからの信号に応じて温度設定ポイントへと前記浴の各ゾーンの水の温度を独立して上昇させるように前記加熱システムを動作させるよう構成され、また前記水の温度を前記上限温度未満に維持するために、前記浴内の1以上のセンサからの信号に応じて前記冷却システムを動作させて前記浴内の水の温度を下げるよう構成され、さらに、前記バッチのキャリア構造の前進モータを制御して、前記殻付き卵のバッチを前記浴内の一連のゾーンを通過させるとともに殻付き卵の各バッチを前記合計滞留時間だけ前記水の中で保持するように構成されていることを特徴とするシステム。 - 請求項2に記載の殻付き卵低温殺菌システムにおいて、前記バッチ処理制御システムが、それぞれが1のバッチ内の殻付き卵の指定のサイズと開始温度に基づいた複数の低温殺菌プロトコルを具え、前記システムがさらに、低温殺菌される殻付き卵のバッチのサイズと開始温度についてオペレータが適切な低温殺菌プロトコルを選択できるよう構成されたユーザインタフェースを具えることを特徴とするシステム。
- 請求項2または3に記載の殻付き卵低温殺菌システムにおいて、さらに、加圧空気源と、前記浴と連絡する流量制御弁とを具える加圧空気供給システムを具え、前記低温殺菌プロトコルはまた、それぞれのバッチにおける殻付き卵の指定のサイズと開始温度について前記浴に流入する加圧空気のレベルを設定するものであり、前記バッチ処理制御システムがさらに、前記低温殺菌プロトコルに従って前記浴に流入する加圧空気のレベルを制御するように前記加圧空気供給システムの流量制御弁の動作を制御するように構成されていることを特徴とするシステム。
- 請求項2に記載の殻付き卵低温殺菌システムにおいて、前記冷却システムが、前記浴内の1以上の温度センサからの信号に応じて前記バッチ処理制御システムに制御され、必要なときに前記浴内の水温を下げるために前記浴内に冷水を加えて前記浴内の水温を前記上限温度未満に維持するための1以上の電子冷水弁を具えることを特徴とするシステム。
- 請求項5に記載の殻付き卵低温殺菌システムにおいて、前記バッチ処理制御システムは、前記浴内の水温を前記上限温度未満に維持するために前記電子冷水弁を制御する比例−積分−微分アルゴリズムでプログラムされていることを特徴とするシステム。
- 請求項2に記載の殻付き卵低温殺菌システムにおいて、個別に制御される各加熱要素が、前記浴内のうちの1のゾーンに配置される加熱コイルと、各加熱コイルに付随して各加熱コイルを通る温水流を制御する電子制御弁とを具え、前記バッチ処理制御システムがさらに、個別に制御される加熱コイルの各々のために比例−積分−微分アルゴリズムでプログラムされたプログラマブル論理制御器を含み、当該比例−積分−微分アルゴリズムはそれぞれ前記低温殺菌プロトコルに規定された温度設定ポイント値を用い、各加熱コイルに付随する1以上の温度センサから前記プログラマブル論理制御器に提供される温度フィードバック信号を受信し、各比例−積分−微分アルゴリズムは、各加熱コイルに付随する電子制御弁の動作を制御するために前記プログラマブル論理制御器から送られる加熱制御信号を生成することを特徴とするシステム。
- 請求項7に記載の殻付き卵低温殺菌システムにおいて、前記加熱システムが、所定のボイラ温度に水を加熱するボイラを含み、前記バッチ処理制御システムの前記プログラマブル論理制御器がさらに、前記ボイラの動作を制御する比例−積分−微分アルゴリズムを具え、前記ボイラのための比例−積分−微分アルゴリズムが、前記ボイラに付随する温度センサから前記プログラマブル論理制御器に提供される温度フィードバック信号を受信して、前記ボイラの動作を電子的に制御するために前記プログラマブル論理制御器から送られるボイラ制御信号を生成することを特徴とするシステム。
