Description
チョコレートミルクが、様々なラムダカラギナンを用いて低糖で調製され、高度に機能的な微晶質のセルロース/カルボキシメチルセルロース(MCC/CMC)安定剤及びチョコレートミルク調合組成物で典型的な(すなわち、減らしていない)量の糖を含有するチョコレートミルクと比較された。当該チョコレートミルク調合組成物は、典型的な量の糖と固体の調合組成物におけるその理想特性を与える対照(“コントロール")として用いられた。この研究は、糖の量を減らして様々なラムダカラギナンを用いた調合組成物が、コントロール(コントロールは典型的な量の糖(すなわち、減らしていない)を用いた)と同等であるチョコレートミルク調合組成物をもたらすかを調べるために行われた。

- タンパク質と、ラムダカラギナンとを含む液体調合物であって、
前記ラムダカラギナンは、分類学上のイソノハナ目に属する少なくとも1つの海草由来のラムダカラギナンを含む、

ことを特徴とする請求項1に記載の液体調合物。 - 前記飲料は、
ミルク、ヨーグルト、果実、エッグノグ、発酵乳、及び豆乳の少なくとも1つを含む、
ことを特徴とする請求項2に記載の液体調合物。 - 前記ラムダカラギナンは、
飲料の0.01重量%から0.5重量%までの量で存在し、
タンパク質由来の総固体成分は、
飲料の1から10重量%であって、
甘味料由来の総固体成分は、
飲料の0から30重量%であって、
脂肪由来の総固体成分は、
