Claims (28)
- グアノシン−5’−一リン酸(GMP)、イノシン−5’−一リン酸(IMP)、及びイノシンから成る群から選択された1又は複数の凍結保護剤を含む、凍結又は凍結乾燥培養液。
- 凍結保護剤がイノシン−5’−一リン酸(IMP)及びイノシンを含む、請求項1に記載の培養液。
- 凍結保護剤がイノシン−5’−一リン酸(IMP)である、請求項1に記載の培養液。
- 1又は複数の凍結保護剤が、その凍結保護性に加えてブースタ効果を有する、請求項1〜3のいずれか1項に記載の培養液。
- 凍結材料の%w/wとして測定した場合、0.1%〜20%の凍結保護剤又はその混合物を含む、請求項1〜4のいずれか1項に記載の培養液。
- 凍結材料の%w/wとして測定した場合、2%〜5%の凍結保護剤又はその混合物を含む、請求項5に記載の培養液。
- 凍結乾燥されている請求項1〜6のいずれか1項に記載の培養液。
- スターター培養液である、請求項1〜7のいずれか1項に記載の培養液。
- ビフィドバクテリウム(Bifidobacterium)種、ブレビバクテリウム(Brevibacterium)種、プロピオニバクテリウム(Propionibacterium)種、ラクトコッカス(Lactococcus)種、ラクトバシルス(Lactobacillus)種、ストレプトコッカス(Streptococcus)種、エンテロコッカス(Enterococcus)種、ペジオコッカス(Pediococcus)種、ロイコノストック(Leuconostoc)種、オエノコッカス(Oenococcus)種及び真菌種を含む群から選択された1又は複数の生物を含む、請求項1〜8のいずれか1項に記載の培養液。
- 前記生物が、30℃の最適成長温度を有する好中温性生物である、請求項9に記載の培養液。
- ラクトコッカス・ラクチス(Lactococcus lactis)、ラクトコッカス・ラクチス(Lactococcus lactis)亜種クレモリス(cremoris)、ロイコノストック・メセンテロイデス(Leuconostoc mesenteroides)亜種クレモリス(cremoris)、ペジオコッカス・ペントサセウス(Pediococcus pentosaceus)、ラクトコッカス・ラクチス(Lactococcus lactis)亜種ラクチス(lactis)次亜種ジアセチラクチス(diacetylactis)、ラクトバシルス・カゼイ(Lactobacillus casei) 亜種カゼイ(casei)及びラクトバシルス・パラカゼイ(Lactobacillus paracasei)亜種パラカゼイ(paracasei)を含む群から選択された1又は複数の好中温性生物を含んで成る、請求項10に記載の培養液。
- 前記生物が、35℃〜45℃の最適成長温度を有する好熱性生物である、請求項9に記載の培養液。
- ストレプトコッカス・サーモフィルス(Streptococcus thermophilus)、エンテロコッカス・ファエシウム(Enterococcus faecium)、ラクトバシルス・デルブルエキイ(Lactobacillus delbrueckii)亜種ラクチス(lactis)、ラクトバシルス・ヘルベチカス(Lactobacillus helveticus)、ラクトバシルス・デルブルエキイ(Lactobacillus delbrueckii)亜種ブルガリカス(bulgaricus)及びラクトバシルス・アシドフィルス(Lactobacillus acidophilus)を含む群から選択された1又は複数の好熱性生物を含む、請求項12に記載の培養液。
- 前記生物が、ラクトコッカス・ラクチス(Lactococcus lactis)亜種ラクチス(lactis)及びラクトコッカス・ラクチス(Lactococcus lactis)亜種クレモリス(cremoris)のうちの1又は複数のものを内含するラクトコッカス(Lactococcus)種である、請求項9に記載の培養液。
- 前記生物が、ラクトバシルス・アシドフィルス(Lactobacillus acidophilus)を内含するラクトバシルス(Lactobacillus)種である、請求項9に記載の培養液。
- 前記生物が、ペニシリウム(Penicillium)種、クリプトコッカス(Cryptococcus)種、デブラリオミセス(Debraryomyces)種、クリベロミセス(Klyveromyces)種及びサッカロミセス(Saccharomyces)種のうちの1又は複数のものを内含する真菌種である、請求項9に記載の培養液。
- 1)ビフィドバクテリウム(Bifidobacterium)種、ブレビバクテリウム(Brevibacterium)種、プロピオニバクテリウム(Propionibacterium)種、ラクトコッカス(Lactococcus)種、ラクトバシルス(Lactobacillus)種、ストレプトコッカス(Streptococcus)種、エンテロコッカス(Enterococcus)種、ペジオコッカス(Pediococcus)種、ロイコノストック(Leuconostoc)種、オエノコッカス(Oenococcus)種及び真菌種を含む群から選択される1又は複数の生存可能な生物の濃縮培養液に対し、グアノシン−5’−一リン酸(GMP)、イノシン−5’−一リン酸(IMP)、及びイノシンから成る群から選択された凍結保護剤を添加する工程、
2)凍結材料を得るために材料を凍結する工程、及び
3)適切な要領で凍結材料を包装する工程を含む、凍結培養液製造方法。 - 1)ビフィドバクテリウム(Bifidobacterium)種、ブレビバクテリウム(Brevibacterium)種、プロピオニバクテリウム(Propionibacterium)種、ラクトコッカス(Lactococcus)種、ラクトバシルス(Lactobacillus)種、ストレプトコッカス(Streptococcus)種、エンテロコッカス(Enterococcus)種、ペジオコッカス(Pediococcus)種、ロイコノストック(Leuconostoc)種、オエノコッカス(Oenococcus)種及び真菌種を含む群から選択される1又は複数の生存可能な生物に対し、グアノシン−5’−一リン酸(GMP)、イノシン−5’−一リン酸(IMP)、及びイノシンを含むか又はそれらから成る群から選択された凍結保護剤を添加する工程、
2)凍結材料を得るために材料を凍結する工程、
3)凍結材料から水を昇華させる工程、及び
4)適切な要領で凍結材料を包装する工程を含む、凍結乾燥培養液製造方法。 - 前記生物が、ラクトコッカス・ラクチス(Lactococcus lactis)亜種ラクチス(lactis) 及びラクトコッカス・ラクチス(Lactococcus lactis)亜種クレモリス(cremoris)のうちの1又は複数のものを内含するラクトコッカス(Lactococcus)種である、請求項17に記載の方法。
- 前記生物がラクトバシルス・アシドフィルス(Lactobacillus acidophilus)を内含するラクトバシルス(Lactobacillus)種である、請求項17に記載の方法。
- 前記生物が、ペニシリウム(Penicillium)種、クリプトコッカス(Cryptococcus)種、デブラリオミセス(Debraryomyces)種、クリベロミセス(Klyveromyces)種及びサッカロミセス(Saccharomyces)種のうちの1又は複数のものを内含する真菌種である、請求項17に記載の方法。
- 前記生物が、ラクトコッカス・ラクチス(Lactococcus lactis)亜種ラクチス(lactis)及びラクトコッカス・ラクチス(Lactococcus lactis)亜種クレモリス(cremoris)のうちの1又は複数のものを内含するラクトコッカス(Lactococcus)種である、請求項18に記載の方法。
- 前記生物がラクトバシルス・アシドフィルス(Lactobacillus acidophilus)を内含するラクトバシルス(Lactobacillus)種である、請求項18に記載の方法。
- 前記生物が、ペニシリウム(Penicillium)種、クリプトコッカス(Cryptococcus)種、デブラリオミセス(Debraryomyces)種、クリベロミセス(Klyveromyces)種及びサッカロミセス(Saccharomyces)種のうちの1又は複数のものを内含する真菌種である、請求項18に記載の方法。
- 請求項1〜16のいずれか1項に記載の培養液と共に前駆体材料を培養する工程及び培養食品を得る工程を含んで成る、培養食品生産方法。
- 培養食品が乳製品前駆体材料から生産される、請求項25に記載の方法。
- 培養食品がバターミルクである、請求項26に記載の方法。
- 培養食品が、チェダー、ゴーダ、カテッジ、エメンタール、グラーナ、モッツァレラ/ピザ、マスダマール及び安定化したブリー又はカマンベールの中から選択されたチーズである、請求項26に記載の方法。
