・原料に食用植物油脂を用いておらず食塩とごまとを含有し、加熱殺菌処理を施してなるノンオイルのごま含有酸性液体調味料であって、酵素未処理のカゼインを0.5質量%以上50質量%以下含有し、かつレシチンを含有することを特徴とするノンオイルのごま含有酸性液体調味料。
・原料に食用植物油脂を用いておらず食塩とごまとを含有するノンオイルのごま含有酸性液体調味料に加熱殺菌処理を施す前に、酵素未処理のカゼインを含有させ、かつレシチンを含有させることにより塩味の持続感を付与することを特徴とするノンオイルのごま含有酸性液体調味料の食味改善方法。
