技術領域
本発明は不溶性のビタミンおよび栄養補助食品を可溶化して光学的に透明な栄養補給飲料を製造する方法に関する。
「機能性食品」または「栄養補給食品」におけるより一層の世界的関心が存在する。食品の従来の特質をブレンドした食料品、すなわちある種の健康問題を治療する、改善するまたは防ぐことが意図されている食物および必須栄養素および薬または栄養補助食品を提供する食料品が存在する。ある意味ではこれらの「新しい」製品は実際にはかなり遠い昔の食品を思い起こさせる。何千年にわたってヒトの食べ物は比較的に安定で変わらなかった。当初ヒトは手に入れられる局所環境の動物および植物を食べて暮らす狩人であり寄り集まり(gathers)であった。ヒトはマクロ栄養素(炭水化物、脂質およびタンパク質)およびミクロ栄養素(ビタミン、ミネラルおよびビタミン様有機化合物)の両方を彼らの食糧供給にて適切に利用することを徐々に発展させた。農業が狩りおよび収穫に取って代わった際に応じて食生活における時折の改革があったが、このような改革でさえ段階的でありヒトは自らの食糧供給に適応していた。食糧供給に関する主な問題は明らかに不足であった。
以下の記載は当業者が本発明を行いおよび使用することができるように提供され、発明を実施する発明者等により検討された最良の形態を説明する。しかしながら、当業者には容易に明らかである種々の変更が残っているであろう。というのは、疎水性栄養補給物質の改善された安定化方法を提供するために本発明の一般原則が具体的に本明細書に明示されているためである。
Claims (21)
- 疎水性栄養補給ナノメートル液滴の濃縮物であって、前記濃縮物は容易に分散して透明な水溶液になり、および
水、ショ糖および親水性共溶媒に最初に溶解させたショ糖脂肪酸エステルと;
栄養補給オイルを作るためにレシチン化合物と共に最初に溶解させた疎水性栄養補給食品とを含み、前記栄養補給オイルに対する前記ショ糖脂肪酸エステルの比は、0.36〜0.50であり、前記ショ糖脂肪酸エステル溶液と前記栄養補給オイルは共に均質化されて少なくとも0.5重量%の疎水性栄養補給食品を含む疎水性栄養補給ナノ粒子の濃縮物を生成する,濃縮物。 - 前記ショ糖脂肪酸エステルは中HLBを有する請求項1に記載の濃縮物。
- 前記ショ糖脂肪酸エステルは高HLBを有する請求項1に記載の濃縮物。
- 前記ショ糖脂肪酸エステルは少なくとも50%のモノエステル含量を有する請求項1に記載の濃縮物。
- 前記ショ糖脂肪酸エステルはショ糖ラウリン酸エステル、ショ糖ミリスチン酸エステル、ショ糖ステアリン酸エステル、ショ糖オレイン酸エステルおよびこれらの混合物からなる群から選択される請求項1に記載の濃縮物。
- 前記共溶媒はプロピレングリコールおよびグリセロールを含む請求項1に記載の疎水性栄養補給ナノメートル液滴の濃縮物。
- 前記レシチン化合物はレシチン、水酸化レシチン、リゾレシチンおよびこれらの混合物からなる群から選択される請求項1に記載の濃縮物。
- 前記疎水性栄養補給食品はオメガ−3脂肪酸、トコフェロール、トコトリエノール、カロテノイド、ビタミンD、ビタミンK、ターメリック、パプリカおよびコエンザイムQ10からなる群から選択される請求項1に記載の濃縮物。
- 粉末として配合された請求項1に記載の濃縮物。
- 容易に分散して水溶液になるナノ液滴の疎水性栄養補給濃縮物を製造する方法であって、
水、ショ糖および親水性共溶媒の溶液にショ糖脂肪酸エステルを溶解させる工程と、
栄養補給オイルを生成するために疎水性栄養補給食品をレシチン化合物と溶解させることにより栄養補給オイルを生成する工程と、
前記溶解したショ糖脂肪酸エステルと前記栄養補給オイルとを均質化してナノ液滴の疎水性栄養補給濃縮物を得る工程とを含む方法であって、前記栄養補給オイルに対する前記ショ糖脂肪酸エステルの比は、0.36〜0.50である。方法。 - 前記均質化工程はさらに、前記溶解した脂肪酸エステルを高せん断ミキサーにより混合する工程と、混合を続けながらここに前記栄養補給オイルを加えて混合物を生成する工程と、前記混合物を均質化のために800barのホモジナイザーに移す工程とを含む請求項10に記載の方法。
- 前記ショ糖脂肪酸エステルは中HLBを有する請求項10に記載の方法。
- 前記ショ糖脂肪酸エステルは高HLBを有する請求項10に記載の方法。
- 前記ショ糖脂肪酸エステルは少なくとも約50%のモノエステル含量を有する請求項10に記載の方法。
- 前記ショ糖脂肪酸エステルはショ糖ラウリン酸エステル、ショ糖ミリスチン酸エステル、ショ糖ステアリン酸エステル、ショ糖オレイン酸エステルおよびこれらの混合物からなる群から選択される請求項10に記載の方法。
- 前記共溶媒はプロピレングリコールおよびグリセロールを含む請求項10に記載の方法。
- 前記レシチン化合物はレシチン、水酸化レシチン、リゾレシチンおよびこれらの混合物からなる群から選択される請求項10に記載の方法。
- 前記疎水性栄養補給食品がオメガ−3脂肪酸、トコフェロール、トコトリエノール、カロテノイド、ビタミンD、ビタミンK、ターメリック、パプリカおよびコエンザイムQ10からなる群から選択される請求項10に記載の方法。
- 前記均質化工程を室温より低い温度で行う請求項10に記載の方法。
- 前記均質化工程を不活性ガスのブランケット下で行う請求項10に記載の方法。
- さらに前記疎水性栄養補給濃縮物から粉末を形成する工程を含む請求項10に記載の方法。
