Description
Claims (1)
- 円錐形で、拡径した一端部が開口するとともに他端部が閉塞した有底筒状に成形し、筒内をフィリングを保持するための保持部として形成したパン生地を焼き上げて焼成パンを生成する焼成パン生成工程と、
前記焼成パンを冷凍する焼成パン冷凍工程と、
前記冷凍した状態の焼成パンの前記一端部より前記他端部側までの外表面を200℃以上かつ230℃以下の温度の油中にて7秒〜15秒油で揚げた後、前記冷凍した状態の焼成パンの前記一端部の開口する部分の一部を、前記焼成パンを垂直方向に対して約45度傾斜させた状態で200℃以上かつ230℃以下の温度の油中に漬けて前記開口する部分を前記焼成パンの軸線周りに回しながら5秒程度油で揚げ、前記保持部である前記筒内を除く表面を油で揚げるフライ工程と、
前記油で揚げた直後の焼成パンにおける凍結状態、または凍結状態に近い状態の前記保持部に、ソフトクリーム、アイスクリーム、シャーベット又はジェラートを配置するフィリング配置工程とを含むことを特徴とする菓子パンの製造方法。
