従来技術を特開平9−57689号を用いて説明する。機台の一側に設けられた丸刃保持部材に回転可能に支持された丸刃と、機台上の案内部材に沿い丸刃に向けて往復移動可能な肉箱とを有する食肉スライサーにおいて、一端が丸刃カバーに回動可能に取り付けられ、スクレーパが装着された他端が丸刃の刃裏面の中心近傍まで延びたアームを設け、丸刃を回転させた状態でアームを介してスクレーパを刃裏面に押し当て、刃裏面に付着した肉かすを除去するものである。なお丸刃は、通常操作側すなわち機台前面から最も離れた後方すなわち機台背面側にあるため、除去作業を行うには機台前面から機台背面まで移動する必要がある。

【発明が解決しようとする課題】
スライス作業は、4〜8時間/日行うのが一般的である。スライス作業を行う食肉スライサーは、50〜70枚/分の速度でスライスする。ブロック肉を載置した肉箱は、その枚数分のサイクルで往復移動している。肉箱内のブロック肉は往復する都度回転している丸刃の刃裏面に接触する。ブロック肉が接触した丸刃の刃裏面は、肉独特の肉汁と脂肪と肉かすが全面に付着する。付着した刃裏面は肉独特の粘り気があり、そのままスライス作業を続行すると粘り気により、スライスした肉片の表面に肉汁、脂肪、肉かすが付着し、商品価値を低下させる。このため付着した肉汁、脂肪、肉かすの除去は欠かせない作業となっている。丸刃の刃裏面に付着した肉汁、脂肪、肉かすの除去作業のサイクルは、スライス作業30分ごとというのが一般的である。上記したように頻繁に行う除去作業(8〜16回/日)の都度、作業者は機台背面まで移動しなければならず作業性が悪いと共にアームを介してスクレーパを丸刃の刃裏面に押し当てる必要があり労力を要するという問題があった。

上記目的は、先端にスクレーパが装着され、丸刃の刃裏面に向かって進退可能なごとく肉箱に取り付けられたスライド軸を丸刃の刃裏面に向かって押圧する押圧部材を設け、肉箱の往復移動時にスクレーパを刃裏面に押し当てることにより達成される。

【発明の実施の形態】
本発明の一実施形態を図1〜図6を用いて説明する。なお図1、図4において左側を作業者が位置して運転・停止等の操作を行う操作側とし、また横方向を前後方向、縦方向を水平方向として説明する。更に図1〜図3において分かりやすくするため図4の案内部材4等を省略している。

機台1の上面後方に設けられた丸刃保持部材3に丸刃2が回転可能に支持されている。機台1上の前後方向に沿って設けられたレール等の案内部材4に沿って往復移動可能なごとく肉箱5が機台1上に設けられている。肉箱5にはスライスされるブロック肉13が載置され、また肉箱5内には、周知のごとく、ブロック肉13がスライスされる都度ブロック肉13を丸刃2側に送る肉送り手段が取り付けられるが、本発明には直接関係しないので図示を省略した。丸刃2および肉箱5は、周知のごとく、機台1内に設けられた図示しないモータ等を介して駆動され、丸刃2は回転され、肉箱5は丸刃2に向かって往復移動される。肉箱5の丸刃2側側面すなわち後方側面には軸受部6が装着され、丸刃2に向かって水平方向に延びたスライド軸8が軸受部6に丸刃2に向かって進退可能に取り付けられている。スライド軸8の丸刃2側先端にはスクレーパ9が固着され、軸受部6と突起部10間に設けられたスプリング11によりスライド軸8は常時丸刃2側に押圧される。従って、スクレーパ9は丸刃2の刃裏面7に押し当てられ、肉箱5の往復移動時にスクレーパ9は刃裏面7に接触しながら前後方向に移動するため、刃裏面7に付着した前記肉かす等を除去するようになる。

肉箱5にブロック肉13を載置し、図示しないスイッチ等を操作すると丸刃2が回転し、肉箱5は往復移動を開始する。肉箱5が一往復するごとに1枚のスライスした肉片12が排出され、その都度スライスされる厚さ分だけブロック肉13が肉送り手段により丸刃2側に送られる。この動作を繰返し行い連続的にブロック肉13のスライス作業を行う。前記スイッチ等を切ると丸刃2と肉箱5の動作が停止しブロック肉13のスライスを終える。肉箱5の往復移動の有無にかかわらず、スプリング11により押圧されているスライド軸8先端のスクレーパ9が丸刃2の刃裏面7に接触したままである。一般的なスライス作業は生肉をスライスするため、肉箱5が往復移動を開始するとスライスされると同時にブロック肉13の切断面が丸刃2側にふくらみ、回転している丸刃2の刃裏面7に接触するので、肉独特の粘り気により肉汁、脂肪、肉かすが刃裏面7の全面に付着する。前記スクレーパ9を設けたため、肉箱5の復路時に刃裏面7の肉汁、脂肪、肉かすが除去される。上記のように4〜8時間/日行うスライス作業中、常時スクレーパ9により刃裏面7から肉汁、脂肪、肉かす等を除去しているため、改めての除去作業が不要になり除去作業の能率向上を図ることができる。また操作位置を離れる必要がなくなり作業性の向上が図れる。
