【発明の属する技術分野】
この発明は、平たい形状をした揚げ煎餅を製造する際に用いて好適な揚げ煎餅の製造装置に関する。

【従来の技術】
従来、平たい形状をした揚げ煎餅の製造装置として、この出願人が出願した特公平5−4051号のものが公知である。

この従来公知の揚げ煎餅の製造装置は、機枠に並設した一対のエンドレスチェーンの下側部分の下方に上に開口した揚げ油槽を設け、前記一対のチェーン間に、両側にローラーを備えてチェーン進行方向の後側が開閉自在の上蓋を取り付けた揚げ篭を、エンドレスチェーンの下側部分において上記揚げ篭の上記チェーンの進行方向の前側を上向きに傾斜させて上記チェーンの外側に突出させて上記チェーンの長手方向に多数設け、さらにエンドレスチェーンの下方に上蓋を揚げ篭に押圧する上記ローラーの挟持ガイドを連続して設け、上記エンドレスチェーンの上側部分の煎餅生地供給位置の両側に、上記ローラーが沿って進行することにより上蓋を押し上げる略山型のレールを設け、押し上げられた上蓋の後端に一端部を押し上げられ且つ他端が回動自在な生地供給案内板を煎餅生地供給位置の上方に設け、さらに生地供給案内板に煎餅生地を配列する真空吸引生地整列機を備えて成るものであった。

【発明が解決しようとする課題】
この従来公知の揚げ煎餅の自動製造装置は、揚げ篭が蓋付きでしかも片開きであるため、揚げ煎餅の生地を揚げ枠へ供給する生地供給案内板を必要とすることから、生地が上蓋に当たって跳ね返ったり、生地供給案内板に一部が乗ったまま揚げ篭が移動したりして、上手く揚げ篭の中に収まらない場合がしばしば生じた。その結果、揚げ煎餅が上手く揚らないものがあり、歩止まりが悪いという問題があった。

さらに、上述した従来公知の揚げ煎餅の自動製造装置の揚げ油槽は、中を揚げ篭が水平に移動して行く構成上、皿状とならざるを得ないが、そのためこの揚げ油槽内の加熱された揚げ油(通常250°C)に中央部より両側にどうしてもその差が20°C前後の温度の低い領域が生じ、揚げ温度にムラのできる結果、揚げ色にむらが出るなどして均一の品質の揚げ煎餅が得られ難いという問題があった。

また、上述した従来公知のものは、蓋付きの揚げ篭がエンドレスチェーンに固定されていたため、生地を受け入れる時は蓋側が上を向いているが、揚げ油槽内を通過する時には蓋が下側となった状態で揚げ油槽内を移動する結果、蓋の厚さ分だけ揚げ油槽へ揚げ油を多く入れなくてはならず、その結果、用いる揚げ油がそれだけ酸化しやすいという問題がった。

さらに上述した従来公知のものは、上記特許公報(特公平5−4051号)では図示されていないが、揚げ油槽の下面に設置する加熱手段が全て固定式であったため、揚げ油の温度にムラが生じても調節することが困難であり、このことから揚げ煎餅の揚げ色にムラが生ずるといった問題があった。

この発明の目的は、揚げ油槽内に充填させる揚げ油を極力少なくすることができるように構成し、揚げ油の使用量を節約し、さらに揚げ油槽内に充填した揚げ油に温度ムラの生ずるのを極力防止した上で、揚げ油の酸化をも防止しすることの出来る、歩止まりの良い揚げ煎餅の製造装置を提供せんとするにある。

【課題を解決するための手段】
上述した目的を達成するためにこの発明は、内部に揚げ煎餅の生地を1個づつ複数個入れる揚げ篭を蓋付きの揚げ枠とし,機枠に並設した一対のエンドレスチェーン間に前記蓋付きの揚げ枠を該エンドレスチェーンの長手方向に多数個取り付け、この各揚げ枠の中に揚げ煎餅の生地を入れて蓋をし、揚げ油槽の下部に設置した加熱手段によって加熱された揚げ油の中に浸漬させた状態で一方向へ移動させて煎餅を揚げる揚げ煎餅の製造装置において、前記揚げ篭をそれぞれ別体に設けた揚げ枠と蓋枠とで構成し、前記エンドレスチェーンを外側に位置する一対の第1エンドレスチェーンと内側に位置する一対の第2エンドレスチェーンとに分けて互いが重なり合う方向へ並設し、前記第1エンドレスチェーンに前記揚げ枠を揺動可能に取り付け、前記第2エンドレスチェーンに前記蓋枠を前記揚げ枠と同一ピッチで固定させ、前記第1エンドレスチェーンと第2エンドレスチェーンの移動を同期させることにより、前記揚げ油槽内において前記揚げ枠が下側となり前記蓋枠が上側となって互いに重なり合って移動するように構成すると共に、前記揚げ油槽の両側の長手方向に、移動する揚げ篭によって内部に収容した揚げ油が水平方向に循環する流れを作る揚げ油環流板を設けたことを特徴とする。

【発明の実施の形態】
以下にこの発明の一実施の形態を図面に基づいて詳細に説明する。

図1と図2において、基台1上には横長皿状の揚げ油槽2が設置され、この揚げ油槽1内部に揚げ油2が充填されている。この揚げ油槽2と基台1との間には、例えば、高周波電磁誘導加熱式の加熱コイル3が4基ずつ2列にして合計8基から成る加熱手段4がセットされている。この加熱コイル3の下側には冷却ノズルと送風機から成る加熱コイル3の冷却手段5,6が設置されている。尚、この加熱手段4は、上述した公知技術(特公平5−4051号)に記載されているように、他にもガスバーナー方式であっても良い。
上述した加熱コイル3から成る加熱手段4は、平面が円形状であるため、温度領域にムラの生ずることを考慮し、その全部或は一部を短時間に水平移動できるように構成されている。この移動手段は、各加熱コイル3を支える各支持台を基台1に設けた長孔に摺動可能に取り付けるものである。尚、これは一例である。

基台1上には、揚げ油槽2の上面側に位置して機枠7が取り付けられ、この機枠7の左右端部側には、前後一対ずつの第1スプロケット8,8・8,8が4個左右同一高さに互いに平行して取り付けられ、この第1スプロケット8,8・8,8より若干内側下方に位置して、第1スプロロケット8,8・8,8より若干小径の第2スプロケット9,9・9,9が4個左右同一高さに互いに平行して取り付けられている。

左右の第1スプロケット8,8・8,8間には、一対の第1エンドレスチェーン10,10が懸架並設されると共に、この第1エンドレスチェーン10,10間には、とくに図1と図2に示したような揚げ枠11,11…が全周長手方向に渡って同一間隔に多数個が配置され、その両端部に設けられた支持部材11a,11aによって、第1エンドレスチェーン10,10の進行方向に揺動自在となるように吊設されて取り付けられている。この第1エンドレスチェーン10,10は、とくに図6に示したように、揚げ油槽2の両側に設置した断面略コの字形状を形成している第1ガイドレール12,12に案内され、図1の正面から見て略逆台形状を呈して循環するように構成されている。

揚げ篭19の一方を構成する揚げ枠11の構成は、とくに図9に示したように、平面矩形状を呈した枠体11bの中に複数の生地収納皿11cを、実施の形態のものでは6個並置連結固定させ、この生地収納皿11cの底板11dに多数の小孔11eを設けてなるものであり、上述したように、枠体11bの両端部に設けた支持部材11aを第1エンドレスチェーン10,10に揺動可能に吊設して成る。底板11cにはさらにスリット11fが設けられている。尚、底板11cはこれを網状のものに代えても良い。

第2スプロケット9,9・9,9間には、同じく一対の第2エンドレスチェーン13,13が懸架並設されると共に、この第2エンドレスチェーン13,13間には、とくに図1と図2に示したように、多数個の蓋枠14,14…が全周長手方向に渡って揚げ枠と同一ピッチで、その両端部に設けた取付部材14aによって固定されて取り付けられている。この第2エンドレスチェーン13,13は、とくに図6に示したように、揚げ油槽2の両側の第1ガイドレール12,12より若干高い位置の内側に設置した、同じく断面コの字形状を呈した第2ガイドレール15,15に案内され、図1の正面から見て略逆台形状を呈するように循環する構成となっている。第1エンドレスチェーン10,10と、第2エンドレスチェーン13,13は図1の正面から見て上側と両側の間隔が広く、下側の間隔が狭い二重リングを形成しており、揚げ油槽2内において、蓋枠14,14…が揚げ枠11,11…の上部を覆い互いにずれることなく同一方向へ移動するように構成されている。

揚げ篭19のもう一方を構成する蓋枠14の構成は、とくに図10に示したように、平面矩形状の枠体14bの中を、揚げ枠11の各生地収納皿11cの上をそれぞれ覆うように、複数の仕切板14cで仕切って蓋体14dを形成して成り、上述したように枠体14bの両端部に設けた取付部材14aを第2エンドレスチェーン12,12に固定してなる。蓋体14dには多数の小孔14eが形成されている。尚、蓋体14dはこれを網状のものに代えても良い。

とくに図1と図6に示したように、揚げ油槽2内において蓋枠14は揚げ枠11の下側にくることがなく、該揚げ枠11の上面を覆い、揚げ枠11が揚げ油槽2の底面近くを移動するように構成したので、揚げ油槽2の底面と揚げ枠11との間の間隔を狭めることが可能となったことにより、揚げ油槽2内に入れる揚げ油2aの量を従来のものよりも少なくしても、揚げ枠11が揚げ油2a内に充分に浸漬させることが可能となったものである。

また、蓋枠14は揚げ油槽2の中で、揚げ枠11の生地収納皿11cの上面を覆うことにより、高温の揚げ油2a内で揚げられる揚げ煎餅の生地22が暴れて変形するのを防止して、上げ煎餅が変形せず平らに揚がるように機能する。

さらに、第1エンドレスチェーン10,10と第2エンドレスチェーン13,13をそれぞれ逆台形状に循環させる手段としての第1ガイドレール12と第2ガイドレール15に代えて、その一部或は両者にガイドスプロケットを用いることは可能である。

揚げ油槽2内部の前部側と後部側には、とくに図3に示したように、長手方向に渡って一対の揚げ油環流板16,16が第1ガイドレール12,12に取り付けられて垂下されるように構成されており、揚げ油2a内を一方向へ移動する揚げ枠11と蓋枠14とによって一方向へ押される揚げ油12に揚げ枠11の移動方向とは逆方向に流れる油路2b、2bが揚げ油還流板16,16と揚げ油槽2の前部と後部との間に形成され、揚げ油2aが揚げ油槽2内で還流されるように工夫されている。この揚げ油還流板16,16は、揚げ油槽2に固着して設けても良いが、実施の形態のように構成すると、揚げ油槽2を洗浄清掃する際に作業がし易いという利点を有している。尚、上げ揚げ油槽2の両端部に設置されているのは揚げ油2aの還流を促す揚げ油分離体17,18である。

とくに図1と図2において、機枠7の右側には揚げ煎餅の生地の自動供給装置20がセットされている。図面において指示記号21はホッパーであり、図示してない揚げ煎餅の生地製造装置から、生地22を受け入れ、これをコンベアー23によって、整列シュート24へ送り込むと、振動モータ25によって振動させられている整列シュート24によって、生地22は整列シュート24に接続されている6列の整列樋26内に順次過不足なく整列させられ、とくに図8の(a)〜(f)に示したように、各整列樋26の先端部分で起立した状態で待機状態となる。

指示記号30は、図7と図8に示したように、6本の吸着ノズル31をその外周へ等間隔に取り付けた中空状の生地吸着用ドラムであり、図11に示したように、電磁クラッチかつブレーキ付きの減速可変モータ32によって回転制御される。この生地吸着用ドラム30は、耐圧ホース33を介して、例えば図1に示したように、ボルテックスブロアー又はリングブロアーと称せられる負圧機器34と接続されており、吸着ノズル31がその先端で生地22を吸着保持するのに必要な吸着力を得るように構成されている。とくに図8(a)〜(f)に示したように、指示記号35は、生地離脱用枠部材である。

再び図1において、機枠7の左側の第1スプロケット8と第2スプロケット9の間には、揚げ煎餅の離脱手段36が設けられている。この離脱手段36は、とくに図4に示したように、揚げ枠11を引っ掛けて約180°反転させる反転ローラー37と、第1エンドレスチェーン10に取り付けた各揚げ枠11の移動に同期して動作する流体シリンダーや電磁石のような直動装置38とから成り、揚げ枠11が反転ローラー37によって反転させられた揚げ枠11が下側を向いたときに直動装置38が動作して、そのピストン棒38aに取り付けた押出杵取付部材39へ等間隔に取り付ける6本の押出杵39aを図5に示したように生地収納皿11cのスリット11fより挿入して、内部に収納附着している揚げ煎餅40を製品シュート41に向けて押出すものである。尚、この揚げ煎餅40は揚げ枠が反転した際に自重でも落下するが、中には附着するものもあるので、完全を期すために設けられている。反転ローラー37の下側に設けられているのは、製品シュート41である。

次に、上述したこの発明に係る揚げ煎餅の製造装置の動作について説明する。図示してない生地製造装置より搬送されて来た揚げ煎餅の生地22は、自動供給装置20のホッパー21へ集められ、コンベアー23を介して整列シュート24上に移送され、この整列シュート24の上で振動モータ25によって与えられる振動により整列されて整列樋26により実施例では6列に整列され、その出口近くで起立させられて生地吸着用ドラム30の吸着ノズル31によって1枚ずつ吸着移動されるのを待つ。

生地吸着用ドラム30は、第1エンドレスチェーン10に取り付けられた揚げ枠11の移動に合わせて減速可変モータ32によって間欠的に回転しており、とくに図8の(a)に示した位置より図8の(c)に示したように、吸着ノズル31の先端で整列樋26の出口に起立している生地22を吸着し、図中反時計回りに回転して、図8の(c)に示したように、吸着ノズル31が起立した位置で停止して次の動作指示が出るまで待機している。図示してないリミットスイッチが移動している揚げ枠11の接近を検知すると、生地吸着用ドラム30は再び図8の(d)に示したように、図中反時計方向へ回転して8の(e)に示したように、揚げ枠11の生地収納皿11aが真下に来た時に、吸着ノズル31がその真上に来るように回転し、図8の(f)に示したように、杵部材35によって強制的に生地22が吸着ノズル31より離されて揚げ枠11の生地収納皿11a内へ落下して収納されることになる。生地22を離した生地吸着用ドラム30はさらに反時計方向の回転を継続し、図8の(a)に示したように、再び吸着ノズル31で整列樋26の出口に起立している生地22を吸着して、図8の(c)に示したように、真上に持ち上げたところで待機する。以後、この動作を繰り返す。

生地22を受けとった揚げ枠11は第1エンドレスチェーン10,10によって運ばれて行き、該第1エンドレスチェーン10,10が第1ガイドレール12,12によって案内されることによって、とくに図3に示したように、揚げ枠11は揚げ油槽2内の揚げ油2aの中に浸漬して行く。この揚げ枠11の浸漬に前後してもう一つの第2エンドレスチェーン13,13に懸架されている蓋枠14が揚げ枠11の上に被さり、両者は一体となって揚げ油槽2内を一方向に移動して行き、揚げ枠11の各生地収納皿11c内に収納されている各生地22は蓋枠14の各蓋体14dによって上から押えられるため、高温の例えば約250℃の揚げ油によっても暴れることなく揚げられ、揚げ油槽2より引き上げられる。この際に、揚げ油槽2内の揚げ油2aは、内部を一方向へ移動して行く各揚げ枠11と各蓋枠14によって一方向へ押され、揚げ油分離体17によって2手に分けられ、左右の揚げ油還流板16,16によって形成された油路2b、2bよりもう一方の揚げ油分離体18へ向かう流れができ、これによって揚げ油2aは自然に対流し、揚げ油槽2の中に温度の不均一が生ずるのを極力防止するものである。

揚げ油2aの温度の不均一は、揚げ煎餅の色によって知ることができるので、必要に応じて加熱コイル3の設置位置を調節し、さらに温度ムラが生じないように工夫するものである。

第1エンドレスチェーン10,10の移動により揚げ油槽2より引き上げられた揚げ枠11から、第2エンドレスチェーン13,13に案内されている蓋枠14が外された後、該揚げ枠11は離脱手段36の反転ローラー37によって約180°回転させられた後、元位置に戻るが、その際に自重で、或は図9に示したように、該揚げ枠11の生地収納皿11cに設けたスリット11fより挿入される押出杵39aによって、該生地収納皿11c内の揚げ煎餅40はその生地収納皿11cより確実に押し出され、製品脱出シュート41内に落下し、次の油切り、包装等の工程へと移送されることになる。

図11は解離手段の他の実施の形態を示し、図面によれば、この解離手段45は、第2スプロケット9の駆動力により駆動力伝達手段を介して回転させられる回転カムプレート46と、スプリング47により一方向に旋回附勢されて、その中央部を枢着させた作動部材48と、この作動部材48の一端に取り付けられて前記回転カムプレート46のカム部46aに接しているカムフロアー49と、作動部材48の他端部に取り付けられた取付部材51より等間隔に突出させられた複数の杵部材50とから構成されている。

【発明の効果】
この発明は以上のように構成したので、次のような効果を奏し得る。

請求項1のように構成すると、蓋枠が揚げ枠の上面を覆う形で、両者が揚げ油槽の中を移動することから、移動部分が全体として薄くなり、さらに揚げ枠が揚げ油槽の内部において常に蓋枠の下側に位置し、揚げ油槽の底部との間の間隔を少なくすることができることから、揚げ油の量を少なくしても、揚げ枠を浸漬移動させるのに充分な油量となり、揚げ油の量を少なくすることができることによって、製造コストを下げ、かつ、揚げ油量が少ないと揚げられる煎餅によって持ち出される揚げ油を常に補充する必要のあることから、揚げ油の酸化を防止し、さらにそれだけ新鮮な揚げ油で揚げられることから、美味しい揚げ煎餅を得ることができると言う効果を奏することができるものである。

さらに、操業中に揚げ油の中を移動する揚げ枠及び又は蓋枠、さらに揚げ油還流板によって揚げ油槽内の揚げ油に中央部を通って両側より元に戻る対流が生ずるので、揚げ油の温度をムラなく均一に保ち、色にばらつきのない揚げ煎餅を得ることができると言う効果を奏することができるものである。
