Description
一方、搾油粕を用いる場合、搾油粕自体が不快臭を既にまとうのみならず、油含量が過少のためにエクストルーダ内部で焦げ付き等の事象を生じやすい。そこで、バレル内への植物油の添加が技術常識であるが、この添加油によって不快臭が更に増大し得る。
植物タンパク質を含む繊維状構造と、
合計含有量が25mg/基材乾燥重量g以下のリノール酸及びリノレン酸と、
0.5mg/基材乾燥重量g以上のリン脂質と、
520mg/基材乾燥重量g以下のタンパク質と、を含む基材。
実施形態に係る植物ベースの組織状基材は、植物タンパク質を含む繊維状構造を有するにもかかわらず、タンパク質含有量や、リノール酸及びリノレン酸の合計含有量が、いずれも過大でない。これは、相応量のリン脂質が含まれる植物材料を用いたことで、エクストルージョン過程で過剰の油分離を生じない一方、焦げ付きを抑制することができ、これによりエクストルージョンが十分に行われ、繊維化が円滑になされるためである。
また、リノール酸及びリノレン酸は、植物特有の臭いを呈するのみならず、酸化されるとヘキサナールやカプロン酸といった不快臭へと変換される。しかし、実施形態では、これらの合計含有量が過大でないため、異風味及び不快臭を抑制することもできる。
上記合計含有量は、特に限定されないが、リン脂質量との兼ね合いでエクストルージョン過程での焦げ付きを抑制しやすい観点で、3mg/基材乾燥重量g以上、6mg/基材乾燥重量g以上、又は10mg/基材乾燥重量g以上であってよい。
粉砕サンプルを試料容器に8割程度アプライし、校正済みのポータブル水分活性測定装置「LabSwift-aw」(novasiza社)の「Slow mode」にて測定する。このとき、水分活性はAW0.6に調整する。
上記量は、特に限定されず、10mg/基材乾燥重量g以下、7.5mg/基材乾燥重量g以下、又は5mg/基材乾燥重量g以下であってよい。
上記量は、特に限定されず、リノール酸及びリノレン酸の合計含有量との兼ね合いで十分な繊維状構造を有しやすい観点で、360mg/基材乾燥重量以上であってよい。
一方、最終用途で要求される性能や、実現するためのタンパク質、リン脂質、リノール酸、リノレン酸の含有量との兼ね合いで、基材の応力は、特に限定されないが、3.0×105Pa以下、又は2.0×105Pa以下であってよい。
また、本発明の基材は異風味及び不快臭が抑制された植物ベース繊維状基材であることから、過剰量のアミノ酸によるマスキングや官能性向上の必要性がない。この観点で、上記量は、特に限定されないが、2000μg/基材乾燥重量g以下、1500μg/基材乾燥重量g以下、又は1200μg/基材乾燥重量g以下、であってよい。
これに対し、従来の基材は、繊維状構造を有しない及び/又は不快臭を有するため、上記量のアミノ酸を含んだとしても、全体として不自然な官能性になりやすい。

ただし、これらの方法に限定されず、適宜の発芽処理を利用してよい。必要に応じて、リノール酸及びリノレン酸を除去する処理や、タンパク質やアミノ酸を高含有する材料の添加を組み合わせてもよい。
これに対し、従来の基材は、繊維状構造を有しない及び/又は不快臭を有するため、上記量の糖質を含んだとしても、全体として不自然な官能性になりやすい。
基材は、原料をエクストルーダ(押出成形機)を用いて加圧加熱処理し、スクリューの先端側に位置するダイから常圧雰囲気へと押し出すことで作成する。必要に応じ、押出物を切断したり、乾燥したりしてもよい。実施形態において、エクストルージョン時の圧力は1気圧以上、温度は190℃以上であってよい。このような加圧加熱条件下においても、実施形態の原料はリン脂質を相応量で含むために焦げ付きを抑制し、また、リノール酸及びリノレン酸の量が過大でないために不快臭を抑制しつつ、エクストルーダを空回りさせることによる繊維状構造の形成阻害を起こしにくい。また、膨化した基材を作成したい場合にも、このような加圧加熱条件であれば容易に実現可能である。
実施形態において、製品は、前述した基材を加工してなる。基材の乾燥状態次第で、必要に応じて水戻し、決着材添加、加熱調理等を行ってもよい。
用途は、特に限定されず、例えば、肉様食品(人間用、ペット動物用)、家畜動物飼料、魚餌が挙げられる。
基材の主原料として用いる大豆種子として、一般大豆種子に対して、特開2008-125515号公報に開示される技術に基づいて16時間又は48時間に亘って発芽処理を施した発芽大豆種子2種類(16時間処理物がA、48時間処理物がB)と、発芽処理を施す前の大豆種子(未発芽大豆種子という)を用いた。発芽大豆種子及び未発芽大豆種子の脂肪酸組成を表1に、リン脂質含有量を表2に示す。なお、種子の脂質全量は、いずれも20~23質量%であった。
発芽大豆種子A及びBを1気圧に設定したエクストルーダに投入し、押し出すことで水分量を約20質量%に調整した。この押出物を2軸同方向回転エクストルーダ(加圧及び加熱)に投入し、孔径4mmのダイから押し出すことで、組織状基材が得られた。これらの基材は、油まみれでなく、リノール酸及びリノレン酸、並びにそれらの酸化物に特有の異臭もなかった。また、タンパク質含有量は、約350mg/基材乾燥重量g及び約370mg/基材乾燥重量gであった。
未発芽大豆種子を用いた点を除き、実施例と同様の条件を採用した。1回目のエクストルーダからの押出物が油まみれであり、2回目のエクストルーダからの押出物は、繊維状構造を有さず、組織状基材ではなかった。
未発芽大豆種子に大豆精製タンパク質を大量に混合した点を除き、比較例1と同様の条件を採用した。2回目のエクストルーダからの押出物は、繊維状構造を有する組織状基材であったものの、油まみれで、リノール酸及びリノレン酸、並びにそれらの酸化物に特有の異臭を放っていた。また、タンパク質含有量は、約530mg/基材乾燥重量gであった。
大豆種子を搾油した後の一般的な脱脂大豆2種類(A、B)の各々を、実施例で用いた2軸同方向回転エクストルーダ(加圧及び加熱)に投入し、孔径4mmのダイから押し出すことで、組織状基材が得られた。しかし、この基材はいずれも、リノール酸及びリノレン酸、並びにそれらの酸化物に特有の異臭を放っていた。
一方、発芽大豆基材は、その油脂全量が乾燥基材に対して14.0%質量%であったことから、リノール酸及びリノレン酸の合計含有量は0.36mg/基材乾燥重量と計算できる。
一方、比較例2の遊離アミノ酸総量は約416μg/乾燥基材重量g、呈味アミノ酸(グルタミン酸、アスパラギン酸、アラニン、セリン、グリシン、スレオニン)の総量は約229μg/乾燥基材重量gであった。
図1~3に示されるように、実施例の組織状基材のみが、鶏肉ロースト品及び鶏肉ボイル品と同様の応力プロファイル(絶対値と、初回ピークから2回目ピークへの若干の応力減少について)を示した。
各基材を水が飽和状態になるまで水戻しした後のレプリカ肉について、異風味、不快臭、食感、呈味の観点で、モニターによる評価を行った。この結果を表5に示す。
Claims (6)
- 植物ベースの組織状基材であって、
植物タンパク質を含む繊維状構造と、
合計含有量が25mg/基材乾燥重量g以下のリノール酸及びリノレン酸と、
0.5mg/基材乾燥重量g以上のリン脂質と、
520mg/基材乾燥重量g以下のタンパク質と、を含む基材。 - 0.7×105Pa以上の応力を有する請求項1記載の基材。
- アミノ酸の含有量が800μg/基材乾燥重量g以上である請求項1又は2記載の基材。
- 発芽大豆種子を原料として用いてなる請求項1~3いずれか記載の基材。
- 大豆以外の発芽豆類種子をさらに原料として用い、膨化した請求項4記載の基材。
- 請求項1~5いずれか記載の基材を加工したレプリカ肉を含む製品。
