表1に示される基本処方に従って調製されたアルコール飲料に、乙類麦焼酎(ニッカウヰスキー製、イソアミルアルコール含有)0.50v/v%と、糖類加熱処理物(池田糖化工業製、5-ヒドロキシメチルフルフラール含有)0.005w/v%とを更に添加して、試験飲料27を調製した。
調製された試験飲料は、イソアミルアルコールを1.5ppm、5-ヒドロキシメチルフルフラールを1.2ppm含有したレモン風味のアルコール飲料であった。
訓練されたパネリストに試飲させたところ、不快な酸味刺激が抑制され、味のまろやかさが増強された、良好な味感を有したレモン風味のアルコール飲料であることが確認された。

The prepared test beverage was a lemon flavored alcoholic beverage containing 1.5 ppm isoamyl alcohol and 1.2 ppm 5-hydroxymethylfurfural.
When a trained panelist tasted the drink, it was confirmed that it was a lemon-flavored alcoholic beverage with a good taste feeling, in which unpleasant sour stimulus was suppressed and the mellowness of the taste was enhanced.
