Abstract
Description
The present invention relates to a beverage, a method for producing a beverage, and a method for improving the flavor of a beverage.
BACKGROUND ART In recent years, as consumers have become more health-conscious, beverages and methods for producing the same have been proposed that take consumers' health into consideration.
For example, Patent Document 1 discloses a sugar-free carbonated beverage that has a pH of 6.5 or higher, a hardness of 100 to 3150 mg/L, and a carbon dioxide concentration of 6.0 to 10.0 g/L. has been done.
The invention according to Patent Document 1 aims to provide a sugar-free carbonated drink, which has been attracting attention with the rise of health consciousness, a texture that does not cause strong irritation to the throat while maintaining the satisfaction of a carbonated drink. It is an object.
On the other hand, the present inventor investigated the flavor of beverages with reduced sweetness such as sugar-free beverages (beverages with a sweetener content below a predetermined value in terms of sucrose) and found that they lack "thickness of taste". Since this problem was noticeable, we thought there was room for improvement in this regard.
In addition, for beverages with a sour taste (beverages with acidity above a specified value) even among beverages with reduced sweetness, we aim to create a distinctive flavor that gives the user a ``fruit juice-like complex taste'' (complex taste reminiscent of fruit juice). The inventor thought that if this could be done, the commercial value of the beverage could be increased.
SUMMARY OF THE INVENTION Therefore, an object of the present invention is to provide a beverage with enhanced flavor depth and fruit juice-like complexity, a method for producing the beverage, and a method for improving the flavor of the beverage.

[Beverage]
The beverage according to the present embodiment is a beverage in which the sweetener content is below a predetermined value in terms of sucrose, the acidity is above a predetermined value, and the glutamic acid content is above a predetermined value. Moreover, the beverage according to this embodiment may contain succinic acid or inosinic acid.
The beverage according to the present embodiment may be an alcoholic beverage containing alcohol, and is not limited to a specific type of beverage, but includes, for example, a chu-hi-taste beverage. The Chu-Hi-taste beverage is a beverage that tastes like Chu-Hi, that is, a beverage whose flavor is designed so that the flavor of Chu-Hi can be felt. Note that the flavor of chu-hi also includes flavors such as sour and cocktail.
Further, the beverage according to the present embodiment may be a non-alcoholic beverage with an alcohol content of less than 1 v/v%, and is not limited to a specific type of beverage, such as an alcohol-flavored beverage, a carbonated beverage, or a fruit juice beverage. Examples include.
Since the beverage according to the present embodiment is a beverage that enhances the complex taste of fruit juice, it is suitable for application to fruit-flavored beverages (beverages whose flavor is designed so that the flavor of various fruits can be felt). It is preferable to apply it to plum-flavored beverages (including umeboshi-flavored beverages, and drinks whose flavor is designed so that you can feel the flavor of plums and umeboshi), which can take advantage of the salty taste of sodium and is compatible with the flavor of glutamic acid. preferable.
(sweetener)
In the beverage according to the present embodiment, the sweetener content is equal to or less than a predetermined value in terms of sucrose.
The present inventor has confirmed that when the sweetener content (sucrose equivalent value) in a beverage is low, the taste is poor.
The sweetener content (sucrose equivalent value) is preferably 3.00 w/v% or less, 2.50 w/v% or less, 2.00 w/v% or less, 1.50 w/v% or less, 1.00 w /v% or less, 0.50 w/v% or less, 0.30 w/v% or less, 0.20 w/v% or less, and 0.10 w/v% or less are more preferable. By having the sweetener content below a predetermined value in terms of sucrose, the beverage contains less sweetener and is considerate of consumers' health, and the problem of the present invention (poor taste) becomes clear.
Further, the content of the sweetener may be 0.00 w/v% (in other words, no sweetener is used) in terms of sucrose.

In addition, the acidity (acidity in terms of citric acid: value of acidity converted as citric acid equivalent) in this specification is based on the Japanese Agricultural Standards for fruit drinks (Ministry of Agriculture, Forestry and Fisheries Notification No. 475, June 27, 2019). It can be obtained by the method prescribed in . Specifically, the beverage was neutralized and titrated with a sodium hydroxide solution (0.1 mol/L), and the "titration amount (ml)" of the sodium hydroxide solution required in the neutralization titration, the beverage used for the titration. It may be calculated using a constant such as "weight (g)" of "0.0064" (weight (g) of citric acid equivalent to 1 mL of 0.1 mol/L aqueous sodium hydroxide solution).
Further, the acidity can be adjusted by adjusting the content of the acidulant described later.

If the beverage according to this embodiment is to be a chu-hi-taste drink or a fruit-taste drink, the beverage may include fruit flavor (flavor that imparts a fruit-like aroma), fruit juice (juice squeezed from fruit), fruit extract (from fruit or fruit juice), It is also possible to contain an extract obtained by extracting the active ingredients of the fruit using water, alcohol, etc. Fruit juices include, for example, various fruit juices such as concentrated fruit juice, reduced fruit juice, and straight fruit juice, fruit purees (semi-liquid products obtained by grinding or straining cooked fruit or raw fruit), and diluted liquids thereof. , concentrated liquid, mixed liquid, etc. can be used.
Fruits from which fruit juice is derived (and fruit species for fruit flavors and fruit extracts) include citrus fruits such as lemons, limes, tangerines, oranges, grapefruit, yuzu, and shikwasa, and rose family fruits such as plums and apples. , strawberries, peaches, cherries (yellow peaches), etc. In addition to these, conventionally known fruits such as grapes, plums, pomegranates, blueberries, cassis, cranberries, maqui berries, apples, mangoes, pineapples, kiwis, pears, etc. can.
In addition, each effect of the present invention is not directly affected by the flavor type or strength of flavor of the flavor, fruit juice, or fruit extract, and at the very least, we believe that the effects will not disappear. As mentioned above, the flavor types may be various, and the content is not particularly limited.
When the beverage according to the present embodiment contains fruit juice, the content of fruit juice is, for example, 1% or more, 2% or more, 3% or more, and 10% or less, 8% or less, or 5% or less.
In addition, the content of fruit juice is "content (juice percentage conversion)% (in detail, w/w%)" = "amount of fruit juice blended in 100g of beverage (g)" x "concentration ratio" / 100g x 100. Here, in calculating the "concentration ratio" (relative concentration ratio of fruit juice when straight fruit juice is taken as 100%), the JAS standard shall be followed. In detail, it can be calculated based on the JAS standards for sugar refractometer readings (°Bx) or acidity standards (%). For example, when using plum juice with an acidity of 7%, According to Attached Table 4 of the Japanese Agricultural Standards for Beverages (Ministry of Agriculture, Forestry and Fisheries Notification No. 475, June 27, 2019), the standard acidity of plums is 3.5%, so this plum juice is double concentrated plum juice. It becomes fruit juice.

In addition, each sample in Tables 1 to 5 uses only fructose-glucose liquid sugar as a sweetener, and the sweetness of fructose-glucose liquid sugar is the same as that of sucrose. The content (in terms of sucrose) is the same as the content of fructose-glucose liquid sugar.
[contents of the test]
For each sample produced by the above method, five trained panelists with discerning ability evaluated the following criteria: ``Thickness of taste without sugar,'' ``Complex taste reminiscent of fruit juice,'' and ``Amino acids remaining in the aftertaste.'' For "unique aftertaste", "poor astringent taste and aftertaste", and "overall evaluation", independent scores were given on a five-point scale from 1 to 5 points, and the average value was calculated.
All evaluations were made by drinking samples.
(Thickness of taste: evaluation criteria)
The evaluation of flavor depth (indicated as "flavor thickness without sugar" in the table) is based on the 3 points of sample 1-1 (each sample in Table 5 is based on the 3 points of sample 5-1), A score of 1 was given for the case that "the taste did not feel thick," and a score of 5 was given for the case that the "strong taste was felt." Regarding the depth of taste, the higher the score, the more enhanced it is, and it can be judged that it is preferable.
Here, "thickness of taste" specifically refers to the volume of taste felt while drinking the sample.
Strictly speaking, "sugar-free" refers to a beverage with a sugar content of less than 0.5 g/100 mL, but in this specification, it is defined as a "beverage with reduced sweetness" (a beverage with a sweetener content of less than 0.5 g/100 mL). It is used with the nuance of being a low-quality drink).
(Fruit juice-like complex taste: evaluation criteria)
The evaluation of fruit juice-like complex taste (shown as "complex taste reminiscent of fruit juice" in the table) is based on the 3 points of sample 1-1 (each sample in Table 5 is based on the 3 points of sample 5-1). ``Weak complex taste reminiscent of fruit juice'' was evaluated as 1 point, and cases in which ``strong complex taste reminiscent of fruit juice'' were evaluated as 5 points. As for the fruit juice-like complex taste, the higher the score, the more enhanced it is, and it can be judged that it is preferable.
Here, the "fruit juice-like complex taste" specifically refers to a complex flavor reminiscent of the fresh and fruity flavor of fruit juice in general, unlike a monotonous sour taste.
(Amino acid-specific residue that remains in the aftertaste: evaluation criteria)
The evaluation of the amino acid-specific aftertaste left in the aftertaste is based on the 1 point of sample 1-1 (each sample in Table 5 is based on the 1 point of sample 5-1). A score of 1 was given for "weak" and a score of 5 was given for "strong aftertaste peculiar to amino acids." As for the amino acid-specific residue left in the aftertaste, it can be determined that the lower the score, the better.
Here, the "amino acid-specific aftertaste" specifically refers to a soup-like flavor that remains in the mouth after drinking the sample, and is a negative flavor that is not suitable for beverages.
(Astringent taste, bad aftertaste: evaluation criteria)
Evaluation of astringent taste and bad aftertaste is based on 1 point of sample 1-1 (each sample in Table 5 is based on 1 point of sample 5-1), and if "astringent taste is weak and aftertaste is not bad" ``Strong astringent taste and bad aftertaste'' was rated 5 points. Regarding the astringent taste and bad aftertaste, it can be determined that the lower the score, the better.
Here, "astringent taste, bad aftertaste" specifically refers to the evaluation of bad aftertaste based on astringent taste, unlike the above-mentioned "amino acid-specific residue" (dashi-like flavor). ing.
(Comprehensive evaluation: evaluation criteria)
Regarding the overall evaluation, no reference points were set, and a score of 1 point was given if the drink had a "poor overall evaluation as a drink" and 5 points if the drink had a good overall evaluation as a drink.
Here, the "overall evaluation as a beverage" is evaluated based on the balance of flavor as a beverage. For example, if the flavor balance is disrupted because the flavor based on a specific ingredient is felt strongly, it is judged as poor. It will be an evaluation.
The table shows the content of each sample and the results of each evaluation. Note that the numerical values and indicators for each component shown in the table are the content and indicators in the final product.
Moreover, the content of "glutamic acid" in the table is a value calculated based on the amount of added sodium glutamate and each molecular weight (molecular weight of sodium glutamate and molecular weight of glutamic acid). Moreover, the content of "inosinic acid" in the table is also a value calculated based on the amount of added sodium inosinate and each molecular weight (molecular weight of sodium inosinate and molecular weight of inosinic acid).
(Consideration of results)
Table 1 shows the results of varying the content of glutamic acid.
From the results of Samples 1-1 to 1-5 in Table 1, it was confirmed that as the content of glutamic acid increased, the scores for "thickness of taste" and "complex fruit juice-like taste" increased.
However, if the content of glutamic acid increases too much, the scores for ``amino acid-specific aftertaste'' and ``poor astringent taste and aftertaste'' will increase, and the ``overall evaluation'' may also decrease slightly. It could be confirmed. However, for samples where the score for "overall evaluation" did not drop significantly, the increase in scores for "amino acid-specific residue remaining in the aftertaste" and "poor astringent taste and aftertaste" may be within an acceptable range. It could be confirmed.
Considering all the evaluations, favorable results were obtained for samples 1-2 to 1-5 (particularly samples 1-3 to 1-4) among samples 1-1 to 1-5.
Table 2 shows the results of varying the pH and sodium content.
From the results of Samples 2-1 to 2-3 in Table 2, it is clear that if the pH and sodium content are within the predetermined range, each effect of the present invention (enhancement of taste thickness, enhancement of fruit juice-like complex taste) It was confirmed that it was effective.
It was also confirmed that each effect was more strongly exerted as the pH and sodium content increased.
Table 3 shows the results of varying the content of succinic acid while containing glutamic acid.
From the results of Samples 3-1 to 3-4 in Table 3, it was confirmed that the score for "thickness of taste" increased as the content of succinic acid increased.
However, if the content of succinic acid increases too much, the score of ``fruit juice-like complexity'', ``amino acid-specific aftertaste'', and ``poor astringent taste and aftertaste'' will decrease due to the astringent taste of succinic acid. It was also confirmed that the "overall evaluation" had increased slightly.
Table 4 shows the results of varying the contents of plum flavor and inosinic acid while containing glutamic acid and succinic acid.
Comparing Samples 4-1 and 4-2 and Samples 4-3 and 4-4 in Table 4, the addition of plum flavor increases the scores for "thickness of taste" and "complex fruit juice-like taste". The result was that. However, it was also confirmed that each effect (enhancing effect of flavor thickness, effect of enhancing fruit juice-like complex taste) was sufficiently exerted even without plum flavor.
Comparing Samples 4-1 and 4-3 in Table 4, the addition of inosinic acid resulted in an increase in the score for "thickness of taste." In other words, it was confirmed that the effect of glutamic acid (the effect of enhancing the depth of taste) can be enhanced based on inosinic acid.
Table 5 shows the results of confirming the effects of the present invention on drinks with an alcohol content of 0.0 v/v%.
From the results of Samples 5-1 to 5-3 in Table 5, it was confirmed that even non-alcoholic drinks had the same effects as alcoholic drinks.
In other words, from the results in Table 5, the present invention is not significantly affected by the alcohol content, and can achieve desired effects (enhancing taste, fruit juice-like effect, etc.) in various beverages, whether non-alcoholic or alcoholic. It was found that the effect of enhancing the complex taste of
