Abstract
Description
実施例1-1:ブドウ糖転移レバウジオシドAの製造
ブドウ糖がα-(1,4)結合により連結された、α-(1,4)ブドウ糖転移レバウジオシドAは公知となった(Food chemistry, 2014, 159, 151-156)方法を用いて次のように製造した:
上記実施例1-1で製造された両試料をそれぞれ水に溶解させた後、パネルに提供して実測甘味度と甘味質を評価した。その結果は、下記表1に示した。
レバウジオシドA(RA)、ステビオシド(STV)、実施例1-1のα-(1,6)ブドウ糖転移レバウジオシドA(RA-Glu)、ブドウ糖転移ステビオシド(STV-Glu)のそれぞれの溶解度を測定した。この時、上記ブドウ糖転移ステビオシドはステビオシドとショ糖をブドウ糖転移酵素の存在の下に実施例1-1と同様の方法で反応させて得られたものである。
実施例2-1:ブドウ糖転移ステビオシド及びブドウ糖転移レバウジオシドAの混合組成物の製造
6%ステビオール配糖体の原料(ステビオシド及びレバウジオシドA(RebA)、この時、RebA(RA)の比率は、それぞれ40、60、80、97%)及び6%白砂糖(CJ第一製糖)を50mM酢酸ナトリウム緩衝溶液に溶解させた後、ブドウ糖転移酵素を添加(最終0.3U/ml)して48時間反応させた。
上記実施例2-1で製造された混合組成物中、3種の混合物(ブドウ糖転移RAがそれぞれ40/60/80%で含まれる。以下、それぞれRA40-Glu、RA60-Glu、RA80-Gluで表す)試料をレバウジオシドA(以下RA、純度97%以上、Sigma aldrich)と同等の甘味度(砂糖10重量%基準で同等甘味)に希釈した後、専門家(n=13)に提供し、描写分析を進行した。その結果は、図1及び表3に示した。
上記実施例2-2の4種の試料を同等甘味度に希釈し、評価48時間前に製造して官能評価を行った。
RA、実施例2-1の混合組成物それぞれ6gを10mlに混合した後、50℃で60分間sonicationを通じて溶解した。これを5、15、25、35、45、または55℃の水槽(water bath)で1週間インキュベーション(incubation)する。その後、溶液を12000rpm、10分間遠心分離し、上清1mlをとって105℃のオーブン(oven)で乾燥させ、溶解度を測定した。
本件出願は、以下の態様の発明を提供する。
(態様1)
糖転移ステビオシド(transglycosylated stevioside)及び糖転移レバウジオシドA(transglycosylated rebaudioside A)を含む、甘味料組成物。
(態様2)
上記糖転移レバウジオシドAは、糖転移ステビオシド及び糖転移レバウジオシドAの重量合計100重量部を基準に、40重量部以上含まれる、態様1に記載の組成物。
(態様3)
上記糖転移が、ブドウ糖転移である、態様1に記載の組成物。
(態様4)
上記糖転移ステビオシドは、ステビオシドにブドウ糖がα-(1,6)結合により連結されて付加される、態様1に記載の組成物。
(態様5)
上記糖転移レバウジオシドAは、レバウジオシドAにブドウ糖がα-(1,6)結合により連結されて付加される、態様1に記載の組成物。
(態様6)
上記糖転移ステビオシドまたは上記糖転移レバウジオシドAは、ブドウ糖が1~3個付加される、態様1に記載の組成物。
(態様7)
上記組成物は、苦味が減少したものである、態様1に記載の組成物。
(態様8)
上記組成物は、溶解度が改善されたものである、態様1に記載の組成物。
(態様9)
態様1に記載の組成物を含む、食品組成物。
Claims (9)
- 糖転移ステビオシド(transglycosylated stevioside)及び糖転移レバウジオシドA(transglycosylated rebaudioside A)を含む、甘味料組成物。
- 上記糖転移レバウジオシドAは、糖転移ステビオシド及び糖転移レバウジオシドAの重量合計100重量部を基準に、40重量部以上含まれる、請求項1に記載の組成物。
- 上記糖転移が、ブドウ糖転移である、請求項1に記載の組成物。
- 上記糖転移ステビオシドは、ステビオシドにブドウ糖がα-(1,6)結合により連結されて付加される、請求項1に記載の組成物。
- 上記糖転移レバウジオシドAは、レバウジオシドAにブドウ糖がα-(1,6)結合により連結されて付加される、請求項1に記載の組成物。
- 上記糖転移ステビオシドまたは上記糖転移レバウジオシドAは、ブドウ糖が1~3個付加される、請求項1に記載の組成物。
- 上記組成物は、苦味が減少したものである、請求項1に記載の組成物。
- 上記組成物は、溶解度が改善されたものである、請求項1に記載の組成物。
- 請求項1に記載の組成物を含む、食品組成物。
