Abstract
Description
本出願は、参照により全体が本明細書に組み込まれる、2017年6月22日出願の欧州特許出願第17177464.9号の利益を主張する。
本発明の一態様では、アルカリ化ココア材料を生産する方法であって、(a)ココア材料とアルカリ化剤を混合するステップと、(b)ステップ(a)の混合物を最大12バールの圧力及び85~180℃の温度で10~500分間反応させるステップと、を含み、ステップ(b)が連続気流下で行われる、方法が提供される。好ましくは、ステップ(b)で得られたアルカリ化ココア材料がプレスされて、ココアバター及びココアケーキが生産され、次いで、ココアバター及びココアケーキが粉砕されて、ハイインパクトアルカリ化ココア粉末が生産され得る。
本発明によるアルカリ化ココア粉末を、以下及び表1に規定される方法に従って調製した。
本発明によるアルカリ化ココア粉末を、以下に規定される方法及び表3に規定されるプロセスパラメータに従って調製した。
実施例3~6の手順を繰り返し、今回は、1試験当たり500kgのココアニブ及び表5に示されるパラメータを使用した。
Claims (14)
- アルカリ化ココア材料を生産する方法であって、
(a)ココア材料、アルカリ化剤、及び水を混合して、10~35重量%の全水分含量にするステップと、
(b)ステップ(a)の前記混合物を最大12バールの圧力及び85~180℃の温度で10~500分間反応させるステップと、を含み、
ステップ(b)が連続気流下で行われる、前記方法。 - 前記ココア材料が、ココア豆、ココアニブ、及びそれらの混合物から選択されることを特徴とする、先行請求項に記載の方法。
- 前記アルカリ化剤が、水酸化カリウム、炭酸カリウム(カリ)、水酸化マグネシウム、炭酸マグネシウム、水酸化アンモニウム、重炭酸アンモニウム、及びそれらのうちの2つ以上の混合物からなる群から選択されることを特徴とする、先行請求項のいずれか1項に記載の方法。
- 前記アルカリ化剤が、前記ココア材料の1~10重量%の量で添加されることを特徴とする、先行請求項のいずれか1項に記載の方法。
- ステップ(b)が、少なくとも50mL/分/kgのココア材料の連続気流下で行われることを特徴とする、先行請求項のいずれか1項に記載の方法。
- ステップ(b)で得られた前記アルカリ化ココア材料を加工して、ココア粉末にするステップをさらに含む、先行請求項のいずれか1項に記載の方法。
- ステップ(b)で生産された前記アルカリ化ココア材料からココアバターを回収するステップをさらに含む、請求項1~5のいずれか1項に記載の方法。
- 先行請求項のいずれか1項に記載の方法に従って得ることができるアルカリ化ココア材料であって、前記ココア材料が、好ましくは、アルカリ化ココア粉末である、前記アルカリ化ココア材料。
- 12以下のL値及び8.0未満のpHを有する、アルカリ化ココア粉末。
- 2.0~7.0のa値を有することを特徴とする、請求項8または9に記載のアルカリ化ココア粉末。
- 1.0~7.0のb値を有することを特徴とする、請求項8~10のいずれか1項に記載のアルカリ化ココア粉末。
- 14FFDM以下の灰含量を有することを特徴とする、請求項8~11のいずれか1項に記載のアルカリ化ココア粉末。
- 1000ppm未満の石鹸含量を有することを特徴とする、請求項7に記載の方法に従って得ることができるココアバター。
- 請求項8~12のいずれか1項に記載のアルカリ化ココア粉末、または請求項13に記載のココアバターを含む、食料、飼料、または飲料組成物。
