Claims (19)
- 流体を急速冷却する方法であって、
冷却する流体の供給源を与えること;
管路を通して前記冷却する流体を流すこと;
寒剤を前記流体中に注入すること;
前記寒剤を注入した後に第1の温度センサーによって、管路内を流れる流体の温度の第1の測定を行うこと;
前記第1の測定の後に第2の温度センサーによって、流れる流体の温度の第2の測定を行うこと;
前記寒剤の注入速度を維持しながら、前記第1及び第2の温度センサーの温度測定値の間の差に応答して前記管路を通る前記流体の流速を調節し、前記第1及び第2の温度センサーの間の温度差を維持すること;
を含む上記方法。 - 寒剤を注入すること、及び温度を維持することを、それぞれ実質的に一定の速度で行う、請求項1に記載の方法。
- 寒剤を注入すること、及び温度を維持することを、それぞれ選択された一定の速度で行う、請求項1に記載の方法。
- 前記第1及び第2の温度センサーからの温度測定値をコントローラーに送ることを更に含む、請求項1に記載の方法。
- 前記流体の流速を調節することを、ポンプ及びバルブからなる群から選択される手段によって行う、請求項1に記載の方法。
- 前記流体が、ソース、スープ、マリネード、及び乳製品からなる群から選択される、請求項1に記載の方法。
- 前記流体が食用ソースを含む、請求項6に記載の方法。
- 前記調節を、PI、PD、PID、MPC、及びマルコフ連鎖コントローラーからなる群から選択されるコントローラーによって行う、請求項1に記載の方法。
- 前記寒剤が、窒素、二酸化炭素、及びこれらの混合物からなる群から選択される、請求項1に記載の方法。
- 前記寒剤が液体窒素を含む、請求項9に記載の方法。
- 冷却された流体を回収タンク内に回収することを更に含む、請求項1に記載の方法。

前記ポンプの下流に配置されて前記管路と流体連絡している、前記流体中に寒剤を注入するための寒剤注入装置;
前記寒剤注入装置の下流に配置されて前記管路内を流れる流体と連絡している第1の温度センサー;
前記第1の温度センサーの下流に配置されている、流れる流体を回収するための回収容器;
前記第1の温度センサーの下流に配置されて、前記回収容器内の流体と連絡している第2の温度センサー;及び
前記ポンプ並びに前記第1及び第2の温度センサーと連絡しており、前記ポンプの速度を調節して流れる流体を制御するために、前記第1及び第2のセンサーのそれぞれからの信号に応答するコントローラー;
を含む上記装置。 - 流体の流速を更に調節するための手段を更に含む、請求項13に記載の装置。
- 更なる調節のための前記手段が、ポンプ、バルブ、及び流体の流れに対する供給源の流体の相対的高さを変化させる手段からなる群から選択される、請求項14に記載の装置。
- 更なる調節のための前記手段が容積式ポンプである、請求項15に記載の装置。
- 前記寒剤が、窒素、二酸化炭素、及びこれらの混合物からなる群から選択される、請求項13に記載の装置。
