表1に示す比率の麦芽(粉砕した大麦麦芽)、水、及び必要に応じてグルコアミラーゼ等の多糖分解酵素を仕込槽に投入し、常法に従って糖化液を製造した。得られた糖化液を濾過して麦汁を得た。得られた麦汁にホップを添加して煮沸し、沈殿物を分離、除去した後、冷却した。実施例1及び比較例2では、ホップの添加時に糖類(グラニュー糖)を添加した。得られた発酵前液(冷麦汁)にビール酵母を添加し、所定期間発酵させた。製造工程において、ホップの配合量、発酵条件等を適宜変更し、実施例1、比較例1〜3のビールテイスト飲料を得た。得られたビールテイスト飲料のアルコール度数は5〜6%の範囲であった。得られたビールテイスト飲料について、重合度4以上の糖の含有量、酢酸イソアミル濃度及びリナロール濃度を測定した。また、リナロール濃度に対する酢酸イソアミル濃度の比を算出した。
