白ワインに代えて、実施例3で用いた赤ワイン(チリ産ワイン)を使用した。その他の点は実施例2と同様の方法を用いて、実施例4に係るワインを得た。

表2に示されるように、実施例3に係るワインは、対照と比較して、味わいのコク、ボディ感が増強されており、全体的なおいしさも増している。すなわち、赤ワインにアセスルファムKを10mg/L(ショ糖換算で2g/L)の含有量になるように添加することにより、ワインのコク等のポジティブな味を増強でき、それによって全体的なおいしさを高めることができることが理解される。
また、実施例4に係るワインは、対照と比較して、味わいのコク及びボディ感が増強されると共に、酸味の強さ、渋みの強さ、及び後味の収斂味の強さが低減されており、全体的なおいしさが増している。すなわち、白ワインのときと同様に、赤ワインにスクラロースを5mg/L(ショ糖換算で3g/L)の含有量になるように添加した場合であっても、ワインのコクなどのポジティブな味を増強でき、加えて、酸味及び収斂味などのネガティブな味を低減することができることが理解できる。

スクラロースの添加量を、1〜12.5mg/L(ショ糖換算で0.6〜7.5g/L)の範囲で変更した以外は実施例4と同様にして、参考例1及び実施例5〜9に係る赤ワインを得た。参考例1及び実施例5〜9に係るワインについて、「2:赤ワインに対する高甘味度甘味料の効果」と同様に官能評価を行った。官能評価はワイン専門パネリスト7名で行った。
結果を表3及び図1に示す。

表3及び図1に示されるように、スクラロースの添加量を増やすに従い、コク及び甘みが増し、酸味、渋み及び収斂味が低減した。スクラロースの添加量が1mg/Lである参考例1では、全体的なおいしさがさほど対照と変わらなかったが、スクラロースの添加量が2.5〜12.5mg/Lである実施例5〜実施例9では、対照と比較して全体的なおいしさが十分に高められた。更に、スクラロースの添加量が5.0mg/L〜10.0mg/Lである実施例6〜8では、実施例5及び9に比べて、全体的なおいしさがさらに高められていた。 As shown in Table 3 and FIG. 1, as the amount of sucralose added was increased, the richness and sweetness increased, and the acidity, astringency and astringent taste decreased.
