Description
The present invention relates to a packaged beer taste beverage and a method for improving flavor thereof.
In recent years, consumption of beer-taste beverages has increased due to diversification of consumer preferences and values and reduction of purchase costs.
As a technique relating to the beer taste beverage, for example, there is a technique disclosed in Patent Documents 1 and 2 below.
Patent Literature 1 discloses a beer-taste beverage having a turbidity at 4 ° C. of 4 ° EBC or more and a ratio of a turbid substance having a particle diameter of 5 μm or less to all turbid substances of 50% or more.
Patent Literature 2 discloses a beer-taste beverage in which the total amount of wheat-derived extract is 0.1 to 2% by weight and the alcohol content is 1.0% or less.
Patent Literature 1 describes that this technique can provide a beer-taste beverage having excellent turbidity stability. Patent Literature 2 describes that this technique can provide a beer-taste beverage with improved foam quality.

[Production method of container-packed beer taste beverage]
Next, a method for producing a beer-taste beverage according to the present embodiment will be described.
As shown in FIG. 1, the method for producing a beer-taste beverage according to the present embodiment includes a pre-fermentation step S1, a fermentation step S2, and a post-fermentation step S3.
The resveratrol, additives and the like can be added at any stage before, during and after alcohol fermentation, that is, at any of the above-described steps.

(Pre-fermentation step S1)
The pre-fermentation step S1 is a step of preparing a pre-fermentation solution containing a wheat-derived raw material. The pre-fermentation solution prepared in the pre-fermentation step S1 is not particularly limited as long as it is a solution containing a nitrogen source and a wheat-derived raw material as a carbon source that can be assimilated by yeast. The nitrogen source and the carbon source are not particularly limited as long as the yeast can assimilate. The nitrogen source that can be assimilated by yeast is, for example, at least one of amino acids and peptides contained in a wheat-derived material. The carbon source that can be assimilated by yeast is, for example, a saccharide contained in a wheat-derived raw material. Since such a wheat-derived raw material has already been described in detail, the description thereof is omitted.
When the pre-fermentation liquid contains wheat and raw materials other than wheat, it is preferable to carry out a step of decomposing proteins and / or polysaccharides contained therein in the pre-fermentation liquid with an enzyme (so-called saccharification step). . Examples of such enzymes include proteases and / or amylase. As these enzymes, those contained in wheat or the like may be used, or a previously purified enzyme may be externally added instead of or in addition to these enzymes.
The pre-fermentation liquid is preferably filtered before the fermentation with yeast in the subsequent fermentation step S2, and more preferably boiled. The addition of water-soluble dietary fiber and iso-α-acid can be at any stage as described above, but it is preferable to add them before filtration or boiling. By filtering the liquid before fermentation, impurities can be eliminated, and a higher quality beer taste beverage can be provided. In addition, since the pre-fermentation liquid can be sterilized by boiling the pre-fermentation liquid to make it sterile, alcohol fermentation in the fermentation step S2 can be suitably performed.
(Fermentation step S2)
The fermentation step S2 is a step in which yeast is added to the pre-fermentation liquid to perform alcohol fermentation. In the present embodiment, for example, first, yeast is added to a sterile pre-fermentation solution whose temperature has been previously adjusted within a predetermined range (for example, in a range of 0 to 40 ° C.) to prepare a fermentation solution.
The number of yeasts in the fermentation liquor at the start of fermentation can be appropriately adjusted, for example, within the range of 1 × 10 2 to 3 × 10 9 cells / mL, and 1 × 10 6 to 3 × 10 9 cells. / ML is preferable.
Next, fermentation is performed by maintaining the fermented liquid at a predetermined temperature for a predetermined time. The temperature of the fermentation can be appropriately adjusted, for example, in the range of 0 to 40 ° C, more preferably in the range of 6 to 15 ° C.
In the fermentation step S2, aging may be further performed. Aging is performed by maintaining the fermented liquid after fermentation as described above at a predetermined temperature for a predetermined time. By this aging, insolubles in the fermentation liquid are precipitated to remove turbidity, and the flavor can be improved.
Thus, in the fermentation step S2, a post-fermentation liquid containing ethanol and flavor components produced by the yeast can be obtained. The concentration (alcohol content) of ethanol contained in the liquid after fermentation can be, for example, 1 to 20%. When the ethanol concentration is less than 1%, the concentration can be adjusted by appropriately adjusting the fermentation conditions such as shortening the fermentation time in the fermentation step S2 or lowering the fermentation temperature. In addition, the concentration of ethanol can be reduced to less than 1% by appropriately diluting the fermented solution having an alcohol content of 1 to 20%.
(Post-fermentation step S3)
The post-fermentation step S3 is a step of subjecting the post-fermentation liquid to a predetermined treatment to finally obtain a beer-taste beverage. The post-fermentation step S3 includes, for example, filtration of the post-fermentation solution obtained in the fermentation step S2 (corresponding to so-called primary filtration). By this primary filtration, insoluble solids and yeast can be removed from the liquid after fermentation. Further, in the post-fermentation step S3, fine filtration (so-called secondary filtration) of the post-fermentation solution may be further performed. By the secondary filtration, various bacteria and remaining yeast can be removed from the liquid after fermentation. In addition, instead of microfiltration, it is good also as sterilizing by heating a liquid after fermentation. The primary filtration, the secondary filtration, and the heating in the post-fermentation step S3 can be performed by general equipment used when producing a beer-taste beverage.
Further, when it is desired to increase the alcohol content of the liquid after fermentation, it is preferable to add the alcohol described above in the post-fermentation step S3, that is, spirits or the like.
In addition, the post-fermentation step S3 includes a step of filling the above-described container.
In addition, in the case where the produced beer taste beverage is non-foaming or has insufficient foaming, and it is desired to impart sufficient foaming to this, in the post-fermentation step S3, carbon dioxide gas is contained. A desired gas pressure can be obtained by adding water or performing carbonation.
The beer-taste beverage according to the present embodiment may be manufactured without going through a fermentation step. For example, it may be manufactured by mixing wort, hop extract, resveratrol, additives and the like.
[Method of improving flavor of container-packed beer taste beverage]

Further, the content of the pisade is preferably 80 ppm or less, more preferably 60 ppm or less.
By controlling the content of the piseide within the above-mentioned predetermined range, the effect of improving the beer quality and the effect of improving the richness while imparting a slight astringency can be exhibited more effectively.
When the resveratrols to be contained in the beer taste beverage include resveratrol and piseide, the total content is preferably 1 ppm or more. Further, the total content is preferably equal to or less than the sum of the upper limit of the resveratrol content and the upper limit of the content of piseide described above.
By setting the total content of resveratrol and piseide within the above-mentioned predetermined range, the effect of improving the beer quality, and the effect of improving the mildness while suppressing astringency can be better exhibited. Can be.

By setting X / Y within the above-mentioned predetermined range, not only the effect of improving the quality of beer and the effect of improving mildness while suppressing astringency can be more clearly exhibited, but also the umami can be improved. It can be a beverage to be presented.
The beer taste beverage has an alcohol content of less than 1% (including 0.00%) in order to more clearly demonstrate the effect of improving the beer taste by the method for improving the flavor of a beer taste beverage according to the present embodiment. It is preferred that

Next, the beer-taste beverage according to the present invention and the method for improving the flavor of the beer-taste beverage according to the present invention will be described with reference to examples satisfying the requirements of the present invention and comparative examples that do not.
First, in Example 1, each effect when resveratrol is used as resveratrol is confirmed.
[Preparation of sample]
In Example 1, resveratrol (resveratrol: Tokyo Chemical Industry Co., Ltd .: product code R0071) and grape extract (exGrape (registered trademark)) were used for a commercially available beer taste beverage (alcohol content: 0.00%). (Total PPR: Sun Bright Co., Ltd.) was added so as to have the content shown in the table below to produce a sample.
In addition, resveratrol was added after dissolving it in a small amount of raw material alcohol, but finally, the alcohol content was adjusted to 0.3% for all samples. In the grape extract used, the content of resveratrol and the content of piseide were both 0.0 w / w%.
[Test content: Example 1]
For each sample manufactured by the above method, three well-trained specialized panels scored 0 to 4 points on a scale of 0 to 4 for "astringency", "mild taste" and "beeriness" according to the following evaluation criteria. Independent scores were assigned by graded evaluation, and the average value was calculated.

(Mild taste: evaluation criteria)
The mildness of taste was evaluated by comparing each sample with a control sample (a sample number ending in 1 and having the same first number in each sample).

3 points: The taste was slightly milder than the control sample.
2 points: The taste was as mild as the control sample.
1 point: The taste was slightly milder than the control sample.
0 point: The taste was not much milder than the control sample.
In addition, after drinking a beer-taste beverage, the body sensation (fullness) remaining in the mouth gradually decreases over time, but the “mildness of taste” is milder as the body sensation decreases more smoothly. It was judged that it was not as mild as the one that lost its body feeling immediately or the appearance of astringent taste changed drastically.

[Examination of test results: Table 2 of Example 1]
As is clear from Table 2 and FIG. 3 in which the results of Table 2 are graphed, it can be seen that even if grape extract is added, as the content of resveratrol increases, the likeness of beer improves. I understood.
In addition, it was found that, even when the grape extract was added, the mildness was greatly improved as the resveratrol content increased, while the astringency gradually decreased.
In other words, since the grape extract does not adversely affect the respective effects exerted by the resveratrol, it is obvious that the respective effects can be obtained even when the grape extract and the resveratrol coexist. It was inferred that the respective effects could be obtained even by using resveratrol of origin.
Next, in Example 2, each effect in the case of using piseid as resveratrols is confirmed.

[Examination of test results: Table 6 in Example 3]
As is apparent from Table 6 and FIG. 7 in which the results of Table 6 are graphed, when the value of X / Y is within a predetermined range, the effects of improving the beer quality and improving the mildness are confirmed. It was found that it was possible and that it was possible to feel the umami.
In particular, it was found that as the contents of resveratrol and piseide approached (as the value of X / Y approached 1), the effect of improving the beer quality was remarkable, and the taste was easily felt.
Furthermore, when the contents of resveratrol and piseide are close (when the value of X / Y is close to 1), the resveratrol is more excellent in beer-like effect than the case where resveratrol alone or piseide is used alone. I understand.
Next, in Example 4, the effect of the alcohol content on each effect is confirmed.
[Preparation of sample]
In Example 4, an effervescent beverage having a malt use ratio of 25% or less was prepared as a sample so that Pisade (Piseid: Tokyo Chemical Industry Co., Ltd .: Product code P1878) and the content of the raw material alcohol were as shown in the table below. .
Pisade was added after being dissolved in a small amount of alcohol for raw materials, but was finally adjusted to have the alcohol content shown in the table.
[Test content: Example 4]
For each sample manufactured by the above method, eight well-trained professional panels scored "astringency,""richness," and "beerness" on a scale of 0 to 4 according to the following evaluation criteria. Independent scores were assigned by evaluation, and the average value was calculated.
(Astringency, richness, beeriness: evaluation criteria)
The evaluation criteria of astringency and beeriness were the same as the evaluation criteria of Example 1, and the evaluation criteria of the richness were the same as the evaluation criteria of Example 2.
[Examination of test results: Table 7 in Example 4]
As is clear from Table 7 and FIG. 8 in which the results of Table 7 are graphed, it was found that when the alcohol content was low, the degree of improvement in beer-likeness was larger.
However, it was also found that even if the alcohol content was high, the effect of improving the beer quality and the effect of increasing the richness although the astringency increased were obtained.
