Abstract
Description
[0057]本出願人は、種々の製品形態を用いて実験を行い、加熱滅菌の間に音波混合を組み込む方法の混合効率を特定した。実験は、加熱又は冷却媒体を収容するための成形容器(例えば、製品容器)の周りに機械加工ジャケット(例えば外側容器)をもつ成形容器を有する加熱/冷却容器を用いて行った。加熱/冷却容器は、形状が略円筒型で、外側容器と製品容器との間を密封するためのO−リングを含むものであった。製品容器は、約8オンスの容積を有するものであった。2つの被覆型熱電対を加熱容器に接続し、1つは製品容器の壁に近い製品の温度を測定し、1つは製品容器の中心に近い製品の温度を測定した。
[0059]図2に示すように、チキンヌードル製品がジャケット側から加熱されると、壁(つまり縁部)の熱電対は、音波混合を適用しないときは、遥かにより速く温度が上昇する。さらに、音波混合を適用しない場合、壁と中心両方の従来式による温度測定値が250°Fより上になるのに2000秒以上かかった。他方、音波混合を適用すると、壁と中心両方の温度測定値は、ほとんど同時に上昇する。同じ効果は、チキンヌードル製品の冷却段階でもはっきりと見ることができる。
[0061]図3に示すように、バーベキューチキン・アンド・ライス製品の中心及び壁の温度の両方(例えば、製品の全容積)を均一に加熱及び冷却することができる。従って、滅菌中にバーベキューチキン・アンド・ライス製品に音波混合を使用することによって、コンテナ内のコールドスポットに関するあらゆる問題が軽減される。
[0063]図4に示すように、パスタ・アンド・ビーフ製品の中心及び壁の温度の両方(例えば、製品の全容積)を均一に加熱及び冷却することができる。従って、滅菌中にパスタ・アンド・ビーフ製品に音波混合を使用することによって、コンテナ内のコールドスポットに関するあらゆる問題が軽減される。
Claims (22)
- 食品を掻き混ぜるための方法であって、
食品を準備するステップと、
前記食品を熱処理しながら、音波混合装置を用いて前記食品を音波混合するステップと、
を含む、方法。 - 前記音波混合は、前記食品に、約150Gまでの加速度を与える、請求項1に記載の方法。
- 前記音波混合は、前記食品に、少なくとも20Hzの力方向の変化率を与える、請求項1に記載の方法。
- 前記食品は粒子状物質を含む、請求項1に記載の方法。
- 前記食品は概ね均質である、請求項1に記載の方法。
- 前記食品は高粘度を有する、請求項1に記載の方法。
- 前記熱処理は、加熱、冷却、及びこれらの組み合わせから成る群から選択される、請求項1に記載の方法。
- 常温保存可能食品を製造するための方法であって、
前記食品の熱処理中に、音波混合装置を用いて前記食品を音波混合するステップを含む、方法。 - 前記音波混合は、前記食品に、約150Gまでの加速度を与える、請求項8に記載の方法。
- 音波混合装置により前記食品を掻き混ぜるステップは、
外側容器によって密閉収容されるように構成され、配置された製品容器を含む熱処理容器を準備するステップと、

前記食品を前記熱処理容器内で同時に熱処理及び音波混合するステップと、
