Abstract
【解決手段】本方法は、植物材料から揮発性芳香化合物を採取する方法であって、a)植物材料を乾燥機内でガスと接触させる工程であって、前記乾燥機内に導入するガス中の水分量が、無水ガス1kg当たり15g未満である工程、b)前記乾燥機の噴出ガス流を、水蒸気またはスチームと接触させて気相混合物を得る工程、およびc)前記気相混合物を凝縮させて、揮発性芳香化合物を含む凝縮物を採取する工程と、を含む。

Description
a)植物材料を乾燥機内でガスと接触させる工程であって、前記乾燥機内に導入するガス中の水分量が、無水ガス1kg当たり15g未満である工程、
b)前記乾燥機の噴出ガス流を、水蒸気またはスチームと接触させて気相混合物を得る工程、および
c)前記気相混合物を凝縮させて、揮発性芳香化合物を含む凝縮物を採取する工程と
を含む方法を提供する。
本明細書において、植物材料という用語は、植物から得られる材料を意味する。植物材料は、植物の、根、茎、葉、種子、花、または他の部分から得ることができる。好ましくは、植物材料は、揮発性芳香化合物を含む。
工程(a)は、植物材料を乾燥機内でガスと接触させる工程である。植物材料は、任意のガスと接触させることができる。
工程(b)は、乾燥機の噴出ガス流を水蒸気またはスチームと接触させて気相混合物を得る工程である。
工程(c)は、気相混合物を凝縮させて、揮発性芳香化合物を含む凝縮物を採取(回収する工程である。工程(c)は、任意の凝縮装置を使用することによって実施することができる。
本明細書において乾燥植物材料という用語は、工程(c)の最後に残った植物材料を意味する。この乾燥植物材料は、工程(a)の植物材料より少ない水分含量を有する。
実験は、植物材料としての180gの紅茶葉(ケニア産)を空気と接触させることによって実施した。乾燥機に導入する空気は、110℃の温度であり、空気の乾燥質量1kg当たり11gの水分含量を有していた。植物材料は、植物材料の乾燥質量1kg当たり2.33kgの水分を含有していた。乾燥機に導入する空気の流量は、3.2kg/時間であった。接触させた空気の合計量は、植物材料の乾燥質量1kg当たり40kgであった。乾燥機の噴出ガスは、取り出された芳香揮発物と、乾燥中に植物材料から放出された水分と含む空気流からなっていた。100℃の温度および96g/時間の速度の蒸気を、乾燥機の噴出空気流に噴射して、気相混合物を生じさせた。加えた蒸気の量は、気相混合物1kg当たり30gである。この気相混合物を、2℃の冷水が供給されているらせん型凝縮装置内に供給した。空気流および蒸気の噴射を40分後に停止させた。凝縮物をTOC計(Shimadzu Model 5000A)で分析し、TOC値を得、これを揮発性芳香化合物の量とした。この値から、芳香成分の量(植物材料の乾燥質量1kg当たりのmgで表す)、および凝縮物中の揮発性芳香化合物の濃度(ppm/水)を算出した。乾燥植物材料は、植物材料の乾燥質量1kg当たり0.72kgの水分を含有していた。別の実験を、蒸気の噴射を全く行わない以外は、上述した方法と同じ方法で実施した。これらの実験の結果を下記に示す。
同様の実験をバジルを用いて実施した。実験の詳細を以下に示す:
植物材料の合計量:160g
植物材料中の水分量:植物材料の乾燥質量1kg当たり9kg
乾燥植物材料中の水分量:植物材料の乾燥質量1kg当たり1.63kg
乾燥機に導入する空気流の速度:3.2kg/時間
蒸気流の速度:180g/時間
蒸気温度:100℃
蒸気添加量は、気相混合物1kg当たり55gであった。
空気流および蒸気噴射は、60分後に停止させた。
実験結果(蒸気噴射ありおよびなし)を下記に示す。
以下の全ての実験は、60分間実施した。これらの実験は、バジルで実施した。実験条件は以下のとおりである。
乾燥機に導入する空気流の速度:4.5kg/時間
蒸気流の速度:180g/時間
乾燥床への注入空気温度を、下記にその結果と共に一覧にしたとおりに変化させた。
以下の全ての実験は、60分間実施した。これらの実験は、バジルで実施した。実験条件は以下のとおりである。
乾燥機に導入する空気流の速度:4.5kg/時間
乾燥床への注入空気温度:110℃
蒸気添加量を、下記にその結果と共に一覧にしたとおりに変化させた。
以下の実験を、乾燥機の噴出ガスに蒸気を噴射する代わりに、乾燥機の噴出ガスを液体の水に通してバブルさせた以外は、表1bにおける条件と同様の条件で行った。
Claims (7)
- 植物材料から揮発性芳香化合物を採取する方法であって、
a)植物材料を乾燥機内でガスと接触させる工程であって、前記乾燥機内に導入するガス中の水分量が、無水ガス1kg当たり15g未満である工程、
b)前記乾燥機の噴出ガス流を、水蒸気またはスチームと接触させて気相混合物を得る工程、および
c)前記気相混合物を凝縮させて、揮発性芳香化合物を含む凝縮物を採取する工程
を含む、方法。 - 工程(a)の前記ガスの温度が30℃より高い、請求項1に記載の方法。
- 工程(a)の絶対圧力が0.051〜0.51MPaである、請求項1または2に記載の方法。
- 工程(c)が、一段階の凝縮工程である、請求項1〜3のいずれか一項に記載の方法。
- 前記植物材料が、茶(Camellia sinensis)、バジル(Ocimum basilicum、Ocimum sanctum、Ocimum tenuiflorum)、パセリ(Petroselinum crispum)、トウガラシおよびチリ(Capsicum annum、Capsicum fruitenscens)、ニンジン(Daucus carota)、アスパラガス(Asparagus Racemosus)、ブロッコリー(Brassica oleracea var. Italica)、シナモン(Cinnamomum aromaticum、Cinnamomum tamala、Cinnamomum zeylancium)、クルクミン(Curcuma longa)、カルダモン(Elettaria cardamomum)、バニラ(Vanilla fragrans)、ジンジャー(Zinziber officinalis)、コリアンダー(Coraindrum sativum)、ストロベリー(Fragaria vesca)、タマネギ(Allium cepa)、ニンニク(Allium sativum)、ならびにクミン(Cuminum cyminum)からなる群から選択される、請求項1〜4のいずれか一項に記載の方法。
- 工程(a)の前記ガスの温度が300℃未満である、請求項1〜5のいずれか一項に記載の方法。
- 添加する水蒸気またはスチームの量が、前記気相混合物1kg当たり1g〜約500gである、請求項1〜6のいずれか一項に記載の方法。
