Abstract
【解決手段】高圧の過熱水蒸気を加熱器内の熱交換器3に導き、食品を間接加熱し、熱交換後の水蒸気を回収して再熱スーパーヒータ4により過熱水蒸気に変換し、この過熱水蒸気を調理器2内の食品の直接加熱に再利用することにより、使用水蒸気量及び使用エネルギーを減少させる。また、間接加熱に使用する熱交換器3を複数設置して過熱水蒸気を複数回再利用することによってさらにエネルギー効率を高めることが可能となる。

Claims (1)
- 過熱水蒸気を用いて食品を調理する方法において、過熱水蒸気発生装置(1)により高圧の水蒸気を過熱水蒸気に変換し、この過熱水蒸気を調理器(2)内の熱交換器(3)に導き食品を間接加熱し、間接加熱後の水蒸気を回収して再熱過熱水蒸気発生装置(4)により過熱水蒸気にし、この過熱水蒸気を調理器(2)内の食品の直接加熱に利用することを特徴とする食品調理方法。
