Abstract
Description
本発明による固体炭酸と液体窒素の混合物を、上記した方法により調製した(15〜30%のCO2の範囲、および−190℃付近の温度が得られるまでの、CO2の取り込み);
液体窒素のみの対照浴も用意した;
ビーフバーガーの初期温度は+3℃であった;
以下の結果がその際、観察された:
a)バーガーを、15秒間液体窒素中に浸漬させた後は、その中心温度は未だ低下していなかった。
b)バーガーを、15秒間、本発明による低温溶液中に浸漬させた後は、その中心温度は3℃下がった。
「成形可能な」ペーストを得るために、本発明による固体炭酸と液体窒素の混合物を、上記した方法(40〜60%のCO2の程度が得られるまでのCO2の取り込み)によって調製し、この初期温度は−190℃付近であった。
冷凍させる製品(例えばアイスクリーム)を上記印に入れた。上記の印を形成している低温スラリーとの接触により、最初の堆積物の固化、続くその冷凍は迅速であった。
このような溶液の使用は、現存の設備に適合し、必要な改変を伴わない(例えば、食品産業における、トンネル(tunnel)、撹拌器、浸漬凍結器等)、
全てのタイプの製品、得ることが最も難しいもの、特に個々の製品、小袋に注ぎいれ得る製品のようなものを得るのが最も難しい種類の製品、および
「スラリー」の製品へのより優れた付着力により、接触時間を改善し、改善された冷却能力、装置の改善された生産量(液体窒素または液体CO2下で通常操作する現存の装置において、単位時間あたり2〜3倍より多い製品を移動させることを早めることができる)。
Claims (3)
- 製品を冷却するための方法であって、冷却の全てまたは一部を製品と低温流体との接触により行い、ここで、前記低温流体は、固体炭酸(CO2)(carbon dioxide snow)および液体窒素の混合物であることを特徴とする方法。
- 混合物中の前記CO2の量を、混合物の伝導度の測定から、この測定の結果に応じて混合物の撹拌速度に影響を与えることにより制御することを特徴とする請求項1に記載の製品を冷却するための方法。
- 冷却される前記製品が食品であることを特徴とする請求項1または2に記載の製品を冷却するための方法。
