Claims (3)

  1. pHが2.5〜4.5のレトルト処理されたタレ・ソース類であって、
    膨潤度が60以下で、アジピン酸基含量が0.020〜0.135重量%であるアセチル化アジピン酸架橋澱粉を含有することを特徴とするタレ・ソース類。
  2. 前記澱粉が、ウルチ種コーンスターチ、ハイアミロースコーンスターチ、ワキシーコーンスターチ、サゴ澱粉、緑豆澱粉、小麦澱粉、米澱粉、馬鈴薯澱粉、甘藷澱粉、タピオカ澱粉から選ばれた少なくとも一種である、請求項1記載のタレ・ソース類。
  3. 喫食時に、加熱調理又は加温調理して用いるものである、請求項1又は2に記載のタレ・ソース類。
