Abstract
【解決手段】 果皮表面にカピリン、ペクチン分解酵素活性阻害作用を示すポリフェノール、HLBが8〜20のポリグリセリン脂肪酸エステルまたはショ糖脂肪酸エステル、及び、脂肪酸グリセリドを含有する組成物を接触させる処理を行った柑橘類果実である。組成物におけるカピリンとポリフェノールの重量濃度比は、カピリン:ポリフェノール=1:1〜1000であると良い。また、カピリンの濃度が2000ppmm未満であることが好適である。ポリフェノールは、最適には、タンニン酸が選択される。

その他、果実の収穫前に薬剤を果実に散布してかびによる腐敗の防止を図ろうとしても、腐敗の完全防止が不可能なことが実情である。

(式2)水酸基価=56110(n+2)/分子量
前記水酸基価とは、エステル化物中に含まれる水酸基数の大小の指標となる数値であり、1gのエステル化物に含まれる遊離のヒドロキシル基をアセチル化するために必要な酢酸を中和するのに要する水酸化カリウムのミリグラム数をいい、水酸化カリウムのミリグラム数は、社団法人日本油化学会編纂、「日本油化学会制定、基準油脂分析試験法(I)、1996年度版」に準じて算出される。
収穫直後の無傷で大きさや成熟度が同等の温州ミカンの果実を抗かび性組成物に2秒間浸漬し、風乾したものを実施例1の果実とした。ここで、抗かび性組成物を、カワラヨモギに含まれるカピリンを抽出した0.02重量%カピリン溶液、エタノール、デカグリセリンモノミリステート、トリ(カプリル・カプリン酸)グリセリル(日清オイリオ株式会社製「O.D.O」)、タンニン酸(大日本製薬株式会社製「局方タンニン酸」)、および、水を混合し、カピリンが100ppm、エタノールが50重量%、デカグリセリンモノミリステートが0.1重量%、トリ(カプリル・カプリン酸)グリセリルが0.5重量%、タンニン酸が0.5重量%、残りが水の溶液として調製した。
高速液体クロマトグラフィーにおける定量条件は、次の通りである。

(実施例2)
抗かび性組成物にカピリンが50ppm、エタノールが37.5重量%、デカグリセリンモノミリステートが0.1重量%、トリ(カプリル・カプリン酸)グリセリルが0.5重量%、タンニン酸が0.3重量%、残りが水の溶液を使用した以外は、実施例1と同様にした。
抗かび性組成物にカピリンが50ppm、エタノールが37.5重量%、ショ糖ミリスチン酸エステル(三菱化学フーズ株式会社製ショ糖モノミリスチン酸エステル主成分、商品名「リョートーシュガーエステルM−1695」)が0.5重量%、トリ(カプリル・カプリン酸)グリセリルが0.5重量%、タンニン酸が0.3重量%、残りが水の溶液を使用した以外は、実施例1と同様にした。
抗かび性組成物にエタノールが50重量%、デカグリセリンモノミリステートが0.1重量%、トリ(カプリル・カプリン酸)グリセリルが0.5重量%、残りが水の溶液を使用した以外は、実施例1と同様にした。
抗かび性組成物にエタノールが50重量%、デカグリセリンモノミリステートが0.1重量%、トリ(カプリル・カプリン酸)グリセリルが0.5重量%、タンニン酸が0.5重量%、残りが水の溶液を使用した以外は、実施例1と同様にした。
抗かび性組成物にカピリンが100ppm、エタノールが50重量%、デカグリセリンモノミリステートが0.1重量%、トリ(カプリル・カプリン酸)グリセリルが0.5重量%、残りが水の溶液を使用した以外は、実施例1と同様にした。
抗かび性組成物に浸漬しなかったこと以外は、実施例1と同様にした。
1区当たり50果の実施例1〜3および比較例1〜4のいずれかの果実をコンクリート上を5m転動させて付傷させた。その後、果実をビニール袋に収納して、常温で3週間放置した。放置後にかびの発生を観察した。

収穫直後の無傷で大きさや成熟度が同等の温州ミカンに抗かび性組成物を噴霧及び塗布し、風乾したものを実施例8の果実とした。ここで、抗かび性組成物には、カピリンが500ppm、エタノールが50重量%、デカグリセリンモノミリステートが0.5重量%、トリ(カプリル・カプリン酸)グリセリルが2.5重量%、タンニン酸が2.5重量%、キサンタンガムが0.2重量%、残りが水の溶液を使用した。
抗かび性組成物に、カピリンが200ppm、エタノールが50重量%、ショ糖ミリスチン酸エステルが2.0重量%、トリ(カプリル・カプリン酸)グリセリルが2.5重量%、タンニン酸が1.2重量%、キサンタンガムが0.2重量%、残りが水の溶液を使用した以外は実施例8と同様にした。
宮内伊予柑を抗かび性組成物に2秒間浸漬し、風乾した。抗かび性組成物には、実施例4〜7と同じ組成物を使用した。
抗かび性組成物に浸漬していない無処理の宮内伊予柑を比較例9の果実とした。
実施例10および比較例9の宮内伊予柑1果当たり4箇所に、5束の虫ピンで、深さ2mm程度に穿孔した。その後、ガーゼに染み込ませた約106個/mlの病原菌を穿孔部に接触させて、病原菌を宮内伊予柑に接種した。ここで、病原菌には、緑かび病菌のベノミル感性菌(MIC値1ppm以下)またはベノミル耐性菌(MIC値10ppm以上)を使用した。病原菌の接種後、一試験区当たり8果とし、25℃の加湿状態で宮内伊予柑を放置した。放置後、2〜4日経過後のかびの発生および発生後の病斑直径を観察した。
病原菌に青かび病菌のベノミル感性菌(MIC値1ppm以下)またはベノミル耐性菌(MIC値10ppm以上)を使用した以外は、試験例2と同様にして試験を行なった。

Claims (3)
- カピリン、ペクチン分解酵素活性阻害作用を示すポリフェノール、HLBが8〜20のポリグリセリン脂肪酸エステルまたはショ糖脂肪酸エステル、及び、脂肪酸グリセリドを含有する組成物を果皮表面に接触させて処理したことを特徴とする柑橘類果実。
- 前記組成物におけるカピリンとポリフェノールとの重量濃度比が、
カピリン:ポリフェノール=1:1〜1000である請求項1に記載の柑橘類果実。 - 前記組成物におけるカピリン濃度が2000ppm未満である請求項1又は2に記載の柑橘類果実。
