Abstract
Description
本発明は、殻または外側コーティングを有する菓子類製品に関する。一層詳しくは、本発明は、ガムのような菓子類製品の部片またはコアを砂糖ベース材料および無糖材料でコーティングする方法に関する。
図2は、本発明に従って使用するための別の代表的なシステムを示している。

本発明は、改良したオーバーコーティングまたはコーティングされた菓子類製品ならびに製品をコーティングする改良した方法を提供する。後述の好ましい具体例においては、菓子類製品はチューインガムまたはバブルガム製品であるが、本発明はガム製品に限らない。本発明は、多種多様な食品および菓子類製品をコーティングまたはオーバーコーティングするのに使用できる。薬剤製品をコーティングするのに本発明を使用することも可能である。

Claims (14)
- 菓子類材料片上に砂糖シロップ材料の層をコーティングする方法であって、
(a)コーティング機構34内に菓子類材料片20を導入する工程、
(b)菓子類材料片の各々に80〜84ブリックスの固形物濃度を有する少なくとも1つの砂糖シロップ材料層42を吹き付ける工程、及び
(c)砂糖シロップ材料の少なくとも1つの層を乾燥させて菓子類材料片上に砂糖シロップ材料のコーティングを形成する工程
を含む方法。 - さらに、菓子類材料片に吹き付ける前に砂糖シロップ材料を加熱する工程を含み、砂糖シロップ材料を、吹き付けるまで、加熱状態に維持する、請求項1に記載の方法。
- 菓子類材料がチューインガム材料である、請求項1に記載の方法。
- 少なくとも1つの砂糖シロップ層を加熱空気によって乾燥させる、請求項1に記載の方法。
- コーティング機構が回転ドラム部材を含む、請求項1に記載の方法。
- 菓子類材料片上に無糖シロップ材料の層をコーティングする方法であって、
(a)菓子類材料片をコーティング機構に導入する工程、
(b)菓子類材料片の各々に、70〜74ブリックスの固形物濃度を有する少なくとも1つの無糖シロップ材料層を吹き付ける工程、及び
(c)少なくとも1つの無糖シロップ材料層を乾燥させて菓子類材料片に無糖シロップ材料のコーティングを形成する工程
を含む方法。 - さらに、菓子類材料片に吹き付ける前に無糖シロップ材料を加熱する工程を含み、無糖シロップ材料を、吹き付けるまで、加熱状態に維持する、請求項6に記載の方法。
- 菓子類材料がチューインガム材料である、請求項6に記載の方法。
- コーティング機構が回転ドラム部材を含む、請求項6に記載の方法。
- ガム材料コア上に硬いキャンディの殻を形成する方法であって、この殻はシロップ材料の連続した層によって形成され、
(a)コーティング機構にガム材料のコアを導入する工程、
(b)ガム材料コア上にシロップ材料の連続した層を吹き付けて該コア上に硬いキャンディの殻を形成し、ガム材料の完成ペレットを形成する工程、
(c)シロップ材料が、高温に維持しなければ結晶化するような固形物含有量を有し、そして、
(d)シロップ材料を高温に維持してその固形物の結晶化および析出を防ぐ工程
を含む方法。 - シロップ材料が砂糖シロップ材料であり、固形物含有量が80〜84ブリックスの範囲にある、請求項10に記載の方法。
- シロップ材料が無糖シロップ材料であり、固形物含有量が70〜74ブリックスの範囲にある、請求項10に記載の方法。
- 無糖シロップ材料が、マルチトール、キシリトール、マンニトール、エリトリトール、ラクチトール、ソルビトール、パラチニットまたはそれらの混合物からなる群から選択される多価アルコールである、請求項12に記載の方法。
- シロップ材料の温度を75〜100℃の範囲に保つ、請求項10に記載の方法。
