Abstract

Per stabilizzare il colore di pasta alimentare includente ingredienti di spiccato cromatismo come spinaci, pomodori e simili, la pasta viene trattata con vapore saturo a 75-80°C e successivamente essiccata a temperature inferiori a 60°C fino a raggiungimento di un contenuto di umidità dell'11%.
