Claims (9)

1. CLAIMS 1. A method of freeze concentration of a comestible liquid comprising injecting an organic liquid cooling medium into the liquid to form ice therein,said medium evaporating and being removed from the liquid, separating the ice from the liquid and further concentrating the liquid by indirect heat exchange and ice separation.
2. A method as claimed in claim 1 wherein the liquid after treatment with the cooling medium is centrlfuged to effect a first ice separation therefrom and is then treated by said indirect heat exchange and then again centrlfuged to effect a second ice separation.
3. A method as claimed in claim 1 or 2 wherein the liquid to be treated is fed to a feed tank into which at least one of the following is fed^ viz ice-washing water from the first ice separation, ice washing water from the second ice separation, and mother liquor from the first ice separation.
4. A method as claimed in claim 1, 2 or 3 wherein ice and the evaporated medium are fed to a tank into direct contact with each other for cooling said medium and melting the ice.
5. A method as claimed in claim 4 wherein said tank receives ice from the first ice separation.
6. A method as claimed in claim 4 or 5 wherein the water from melted ice from said tank is fed partly to a centrifuge for washing ice therein and partly to a holding tank which receives the washed ice.
7. A method as claimed in any of the preceding claims wherein "the same cooling medium is used in the indirect heat exchange step as in the injection step, and the evaporated medium from both steps is recovered for re-use.
8. . A method as claimed in any of claims 1 to 7 wherein the liquid is a coffee containing liquid.

A method as claimed in any of claims 1 to 7 wherein the liquid is orange juice. 10 o A method as claimed in any of the preceding claims wherein the ice crystal content of the liquid produced by injection of said medium therein is 15 to 25 per cent by weight preferably 18 to 22 per cent. 11 o A method as claimed in claim 9 wherein the liquid to be treated has a Brix value 10 to 12 , the concentrate from the injection step has a 2 0 to 40 Brix value (preferably 30 to 32 ) and the concentrate from the indirect heat exchange step has a Brix value of 40 to 65. 12 . A method as claimed in any of the preceding claims wherein the concentrate from the indirect heat exchange is frozen and freeze dried by subliming off water at low temperature and pressure. 13 o A method as claimed in any of the preceding claims wherein froth produced in the injection step is reduced by cooling the frotho 1 o A method as claimed in claim 13 wherein the froth is cooled by cooling the space above the froth. 15 o A method as claimed in claim 13 wherein the froth is cooled by spraying a readily evaporating cold liquid upon it0 16 . A method as claimed in claim 15 wherein the sprayed liquid is the same as the injected cooling medium. 17. A method as claimed in claim 1 and substantially as described with reference to Pig. 1 or Pigs. Ί and 2 or Pigs. 1 and 3 of the accompanying drawings. 18. A method as claimed in any of the preceding claims wherein the cooling medium is "butane or freon. 19. A product when produced in accordance with the method claimed in any of the preceding claims. 20. An apparatus for freeze concentration of a liquid comprising a direct contact crystallizer, (first crystallizer) means for feeding the liquid to the direct contact crystallizer (second crystallizer) and thereafter to the indirect contact crystallizer, means to inject a cooling medium into the liquid in the direct contact crystallizer, and means for supplying a cooling medium to the indirect contact crystallizer. 21. An apparatus as claimed in claim 20 having a first centrifuge for separating ice from liquid from the first crystallizer and a second centrifuge for separating ice from liquid from the second crystallizer. 22 o An apparatus as claimed in claim 21 having a feed tank, means to feed the liquid to said tank, and means to feed at least one of the following to said tank viz ice-washing water from the first centrifuge, and mother liquor from the first centrifuge. 23. An apparatus as claimed in claim 20, 21 or 22 having an ice melting tank, means to feed the evaporated medium to said tank and means to feed ice to said tank into direct contact with said medium and means to recondense the medium from said tank. 24. An apparatus as claimed in claims 21 and 23 having means for feeding ice from the first centrifuge to said tank. 1 25. An apparatus as claimed in claim 21 and 23 or 24 having an ice holding tank, means for feeding water from the ice melting tank partly to the first centrifuge, and partly to said ice holding tank, and means for feeding ice from the first centrifuge to the ice holding tank. 26. An apparatus as claimed in any of the preceding claims 20 to 25 wherein the same cooling medium is used for the first and second crystallizers and having means for recondensing the evaporated medium from both crystallizers. 27. An apparatus as claimed in any of claims 20 to 26 wherein the first crystallizer has a cooling device in the upper part thereof. 28. An apparatus as claimed in any of claims 20 to 26 wherein the first crystallizer has means for spraying cooling medium on to the froth on the liquid therein. 29. An apparatus as claimed in claim 20 substantially as described with reference to Pig. 1 of the accompanying drawings. 30. An apparatus as claimed in claim 20 having means for cooling froth in the first crystallizer substantially as described with reference to Pig. 2 or Pig. 3 of the accompanying drawings.
