Abstract
Edible fat compsn. (A) having an iodine no. of 30-50 and a 37-45 (esp. 40) degrees C rising m.pt. consists of a co-randomised mixt. of a palm butter having iodine no. 50 with >20% softening fat contg. a smaller quantity of a lauric acid fat. Ice-cream mfr. (i) Solids content of fat at 20 degrees C is higher than obtd. by plain mixing; (ii) ice-cream fat can be obtd. from palm butter residues after separation of more valuable fractions. (A) contains more palm butter than lauric acid fat, at least when palm butter rising m.pt. is =55 degrees C, esp. 70-90 pts. palm butter and 10-30 pts. lauric acid fat. Palm butter may contain solvent-fractionated stearin fractions. softener consists of lauric acid fat, opt. contg. coconut oil, and palm oil, and opt. other fats, esp. shea olein, free from polyethylenic unsaturation. Pref. (A) has 700-1000 dilatation at 20 degrees (D20).
