Abstract
A shortening composition comprises a moisture free mixture of (a) 5-12%, preferably 8-9% by weight of a marine oil hydrogenated to an iodine value not above 2 so as to form flakes, and (b) a partially hydrogen-sted marine and/or vegetable oil which has suitably been hydrogenated to an iodine value of 50-80, preferably 63-73 in the case of the marine oil, and to an iodine value of 65-90, preferably 70-75, in the case of the vegetable oil. Marine oils suitable for complete or partial hydrogenation are whale oil, menhaden oil or sardine oil; suitable vegetable oils include soybean oil, coconut oil, cottonseed oil or peanut oil. The composition is prepared by mixing the flakes (a) with the mixture (b), bleaching the composition with activated clay or carbon, deodorizing, and finally tempering the mixture by allowing it to stand for more than 24 hrs. at 80-90 DEG F. Such shortenings are especially useful in cake mixtures (see Group VI).ALSO:Pound cakes are prepared by baking a mixture comprising (a) 1 lb. granulated sugar, (b) 8 oz. shortening, (c) 1/2 oz. salt, (d) 8 oz. eggs, (e) 8 oz. milk, and (f) 1 lb. cake flour in which the shortening (b) comprises a moisture-free mixture containing 5-12% by weight of a marine oil hydrogenated to an iodine value not above 2 so as to form flakes, and a partially hydrogenated marine and/or vegetable oil (see Group III).
