Abstract

1428394 Making tea UNILEVER LTD 27 June 1973 [29 June 1972] 30412/72 Heading A2B A composite tea product comprising black leaf tea and hot water soluble solids of fermented tea is prepared by forming a mitxure of black-leaf tea and powdered hot-watersoluble solids of tea and wetting the mixture by spraying water on to it in an amount of from 2 to 15% by weight of the unwetted mixture whilst stirring the mixture, and then drying the mixture to produce the desired composite product. The weight ratio of black leaf tea to powdered hot-water-soluble solids of fermented tea is from 3:1 to 12:1. The unwetted mitxture may also contain a buffering agent, e.g. citric or ascorbic acid or their salts, which agent may be present in an amount up to 2% by weight of the total weight of tea.
