Theaflavin, theaflavin gallate or a mixture containing these substances obtained as the residue after extracting tea waste with organic solvent containing water (e.g. aqueous ether) is used to improve black tea. The mixture may also contain caffeine. The residue in solution or sespension in water or acetone may be sprayed on to the black tea before it is dried or fired. The tea waste may be mixed with glass or kieselguhr to quicken the extraction process.
