Abstract

1485362 Extracting tea leaves UNILEVER Ltd 2 Sept 1974 [5 Sept 1973 26 Oct 1973] 41649/73 and 50085/73 Heading A2B Tea leaves are extracted with an aqueous solution of ammonium bicarbonate or of ammonia. Preferably a solution containing between 0.1 and 3.0% of ammonium bicarbonate is used, alternatively between 1% and 30% by w.t. of the tea solids may be used. The extract obtained may be heat treated at a pH of 3.5 to 8.5 by adding hydrogen peroxide thereto at a temperature greater than 70‹C. In a multi-stage extraction the ammonia or ammonium bicarbonate is added towards the end of the process.
