Abstract

Novelty: a dry lyophilized-dehydrated cheese of the feta type or other soft brined white cheese is disclosed. Properties: humidity reduction up to 97% with no alteration of the aroma, nutritional components and structure of the protein netting and shape of the initial product; double phosphorus protein and calcium content than that of the initial product; storage and distribution in environmental temperature with no need of oxygen removal during packing; increased preservability up to 500% (preservation up to 5 years from the production date) compared to the ordinary cheese the preservability of which is restricted to one year only. Embodiment: to be consumed as it is in the form of snack or to be added to other food for enhancing the taste thereof; namely, it can be restituted by absorbing the liquids of other foodstuff (e.g. tomato juice, juice of other vegetables, olive oil, spices, broth of meat, poultry etc).
