Abstract

In a process and apparatus for ageing an alcoholic beverage, such as whiskey, brandy and wine, contained in wooden barrels 14 having charred inner surfaces, a bladder 24, e.g. of polyethylene, located in each barrel, is inflated, e.g. intermittently, with a fluid, such as compressed air, supplied through a pipe 38, a valve 40 and a pipe 34, to bring the beverage 42 into contact with the whole charred inner surface of each barrel and, for example, to agitate the beverage. Any gas in a barrel is expelled through a conical hole in its upper <PICT:0978514/C6-C7/1> side, which hole is then closed by a conical plug 54, hinged inside the barrel. The plug is preferably covered with soft plastic material and provided with a wooden or cork base, so that it floats on the rising beverage and is urged into the conical hole to close and seal it and thus prevent leakage of beverage.
