Abstract

Within the vessel an inflatable cushion is suspended at a level such that it extends well above the highest surface of marc and well down into the must. The cushion is made of non-toxic, impermeable plastic sheet and can be connected to a source of fluid under pressure, e.g. compressed air. Periodic inflation of the cushion disturbs the crust of marc and opens up the liq. surface to the vessel head space.
