An apparatus for fermenting tea leaf, stacked more thickly than usual, under controlled conditions of temperature and humidity, includes an air-conditioning chamber 1, a duct 6 along which air from the chamber 1 is driven by a fan 4, a number of chambers 13 detachably connected at outlets 7 of the duct 6, and a perforated tea leaf container 14 in the upper part of each chamber 13.
