Abstract
956,529. Dividing dough &c. BREAD RESEARCH INSTITUTE OF AUSTRALIA Ltd. July 19, 1962, No. 27865/62. Heading B5A. A dough or batter cutting machine comprises a dough chamber 7, containing dough which is forced by gas pressure applied above towards an orifice 8 (Fig. 3) and allowed to emerge as reciprocating blades 10 open and close. The orifice diameter is varied by two shutter plates 28 closed or opened by a hand wheel 71 and attached mechanism. The blades 10 open and close by means of shafts 29 and arms 32, the shafts 29 being rocked about their axes by a cam and lever arrangement (Fig. 5, not shown). The cam also actuates a gate 75 which locates each tin 9, on a moving belt, under the orifice 8 to receive a dough piece. The cam is rotated via a clutch device which incorporates a lever 56 for stopping and starting, so that the machine can be stopped only with blades 10 closed. A sensing rod 61 detects electrically when the dough level drops to a certain point and stops the machine. The upper portion 7A of the chamber hinges back for cleaning. The dough may be forced out of orifice 8 by gas pressure applied via a conduit 14 or chamber 7 may have a mechanically or hydraulically operated piston, or weights may be used. Means may be provided to vary the gas pressure, and the blade speed is controllable by a variable speed drive 18.
