Abstract

A number of dough lumps are arranged on an oven loader and a scoring mechanism is brought into position, frame-mounted above the loader. All dough pieces are scored simultaneously by blades carried at driven ends of bell-crank levers which pivot to carry the blades through arcs lying in a single, horizontal plane. Actuation of the bell-crank levers is by a common, horizontally-reciprocating frame which can be driven manually on its non-cutting stroke to load springs which effect the return cutting stroke as they unload. The actuation may be by electric, hydraulic or pneumatic power.
