Abstract

Automatic scoring device is intended for making regular incisions in the dought before it enters the oven so that, after cooking, the long loaf acquires its characteristic appearance. The device, for the simultaneous treatment of sixteen pieces of dough regularly spaced on a honeycombed support, comprise a row of scoring assembles, fixed side by side above the dough on a horizontal cross-bar. The ends of the latter are fixed in two housings which can move on the columns, these in turn are mounted on two carriages which can slide on horizontal seats. With the scoring assemblies with their blades in the starting position, as shown the electric motor is started, this cuases an incision to be made on all the pieces of dough, near one end, Motor then starts and moves the movable portion of the machine one step along the slides. A limit switch stops the motor when the blades are in position for making the second insicion which is effected by another motor. The movable part is again actuated for making the final incisions. A further motor then raises the cross-bar with al the scoring assemblies. The dough is removed on the support and a fresh load placed in position ready for a repeat of the process. The scoring is effected rapidly without the intervention of an operator the incision are of equal length and are regularly distributed.
