Abstract

Capsules having water-soluble nuclei of edible or flavouring matter surrounded by walls of jellied gelatin are formed by causing the water-miscible nucleus materials to replace an oily nucleus originally enclosed in the capsule. The replacement is effected by immersing the capsules, with the walls in a swollen state due to absorbed water, in a liquid exchange vehicle which is miscible with water and a solvent for the liquid nucleus, and then recovering the capsules from the liquid exchange vehicle and extracting the water from the capsule walls in a water absorbing bath to render them impermeable by the new liquid nucleus. For example d-limonene disposed in an aqueous solution of gelatin and gum arabic can be encapsulated by cooling the system and lowering its pH. The capsules can then be filtered and immersed in anhydrous ethanol for one hour, after which the super latent liquid is replaced by a solution of 20% terpene-less lemon oil in ethanol. After five hours the capsules are filtered and washed in warm ethanol saturated with sorbitol. The capsules may then be dried with starch or by a fluidized bed. Other examples describe the replacement of corn oil by edible components dissolved in ethanol, and the replacement of acetylated monoglycerides by a solution of vanillin in ethanol. The new nucleus may consist of the water-miscible fraction of flavours expressed from seeds, leaves, fruits &c.
