A shirred sausage skin holder A, Fig. 1, in the form of a pliable waterproof sleeve, has a hole 23, for engaging a stuffing horn, in a tab 19. A stiffener B, Fig. 3, is inserted in the holder. The sleeve A may be of plastic (e.g. polyethylene terephthalate, polyethylene or polypropylene) of 2-10 mils. wall thickness and the stiffener is of the same material of thicker gauge.
