Abstract

A shirred tubular casing has one end deshirred and disposed within the bore of the casing extending close to the second end. The deshirred end is gathered and closed by an external clip. Material is fed into the casing and does not contact the clip. As the material is fed in the shirred casing turns inside out so that the external surface of the shirred casing contacts the material. The casing may be either a coated cellulose casing or a coated fibrous casing. The casing is used for various types of sausage product. The sausage product does not contact the fastening clip and thus possible contamination is prevented.
