Abstract
933,434. Salting butter &c. SEPARATOR A.B. April 19, 1962 [April 26, 1961], No. 15270/62. Class 49. A method for salting butter, margarine or the like consists in supplying to the butter &c. and working into it a mixture of water and solid salt having a maximum grain size of 0.05 mm. The mixture should contain 50 to 90% salt, preferably 75%, calculated as dry substance. There may be used a mixture, containing at least 10% of water, of brine and solid salt, or solid salt may be supplied in a water douche amounting to at least 5% of water, based on the quantity of salt. In continuous butter &c. making, the salt addition can be controlled automatically. The mixture of brine and solid salt may be supplied to a ribbon of butter &c. through a needle valve 23, Fig. 1, by compressed air from a pipe 24; alternatively, finely-ground salt is fed out in the desired quantity by a conveyer screw 29, Fig. 2, and is moistened by water douches 31. The counterpressure against which the butter &c. is discharged from the machine may be controlled by a throttling gate 18 adjustable by a screw 17.
